Ingredients
- 1 cup almond flour
- 1/2 cup rolled oats
- 1/4 cup protein or collagen powder (vanilla or unflavored)
- 1/4 cup honey or maple syrup
- 1 tablespoon poppy seeds
- 1-2 lemons, juice and zest, depending on how lemon-y you prefer
Instructions
- In a medium bowl, combine almond flour, rolled oats, protein powder, honey poppy seeds, lemon juice and zest and mix until well combined.If the mixture is too dry, add a little water, one teaspoon at a time, until it holds together.Roll the mixture into small balls, about 1 inch in diameter.Place the protein balls on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.Store in an airtight container in the refrigerator for up to a week or in freezer for up to 3 months.
