Lemon Poppy Seed Protein Bites

Unlike many other lemon truffle recipes, this one calls for no heavy cream, refined sugar, heavily sweetened condensed milk, lemon cake mix, or biscuit crumbs.

These protein bites are made with delicious, fresh and healthy ingredients that you may already have on hand: almond flour, oats, honey, poppy seeds, fresh lemon juice and lemon zest along with protein or collagen powder.
You can sure satisfy your lemon cravings with this high protein treat. These lemon poppy seeds bites have 6g of protein each. With the flavor and texture of classic lemon cheesecake, these melt-in-your-mouth, small but mighty bites are an absolute delight to all who try them.

Ingredients

  • 1 cup almond flour
  • 1/2 cup rolled oats
  • 1/4 cup protein or collagen powder (vanilla or unflavored)
  • 1/4 cup honey or maple syrup
  • 1 tablespoon poppy seeds
  • 1-2 lemons, juice and zest, depending on how lemon-y you prefer

Instructions

  • In a medium bowl, combine almond flour, rolled oats, protein powder, honey  poppy seeds, lemon juice and zest and mix until well combined.
    If the mixture is too dry, add a little water, one teaspoon at a time, until it holds together.
    Roll the mixture into small balls, about 1 inch in diameter.
    Place the protein balls on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
    Store in an airtight container in the refrigerator for up to a week or in freezer for up to 3 months.
