Lemon Poppy Seed Protein Bites

These yummy little protein bites are the most delightful treat! They are perfect to have as a healthy afternoon snack or to take on the go! You will get protein kick and a nice boost of energy.
Unlike many other lemon truffle recipes, this one calls for no heavy cream, refined sugar, heavily sweetened condensed milk, lemon cake mix, or biscuit crumbs.
I think I’m becoming obsessed with all things lemon lately. Lemon bars, lemon fudge, lemon cheesecake, lemon smoothies, lemon protein – give me it all as long as they are healthy and good for me!
These protein bites are made with delicious, fresh and healthy ingredients that you may already have on hand: cashews, oats, dates, nut butter, poppy seeds, fresh lemon juice and lemon zest along with protein or collagen powder.
You can sure satisfy your lemon cravings with this high protein treat. These lemon poppy seeds bites have 6g of protein each. With the flavor and texture of classic lemon cheesecake, these melt-in-your-mouth, small but mighty bites are an absolute delight to all who try them.

Ingredients

  • 1 cup cashews, soaked 3+ hours and drained
  • 1 cup dates, soaked 30 minutes and drained
  • 1 cup oats, instant or quick
  • 2 tablespoons cashew (or any nut or seed) butter
  • 1-2 lemons, juice and zest, depending on how lemon-ey you prefer
  • 2 scoops protein or collagen powder
  • 1/4 cup poppy seeds

Drizzle Topping

  • 1/2 cup Greek yogurt
  • Lemon zest
  • Poppy seeds

Instructions

  • Place all ingredients (except poppy seeds and coconut) into a food processor and process until a smooth dough is formed.  Pulse in the poppy seeds.
    If the dough seems a little dry, add water, 1 tablespoon at a time, processing briefly between each addition, until a dough begins to form.
    Chill the mixture for 30 minutes, for easier rolling then when chilled and firm, with a tablespoon, scoop out even chunks and roll into 12-14 small balls, about the size of golf balls or 1 inch in diameter.
    Drizzle roughly 1 teaspoon of yogurt over each ball as icing.
    Sprinkle with extra poppy seeds and lemon zest for a garnish.
