Healthy Yogurt Ice Cream

Yogurt Ice Cream is thick, ultra creamy, and makes the perfect low sugar, healthier swap for ice cream. This recipe can be made with coconut yogurt to keep it vegan or you can use Greek yogurt for a higher protein option!

I am all about desserts with benefits and not only being mindful of what we put into our bodies, but the WHY behind what ingredients we are using – as they all serve a purpose!
Coconut is packed full of healthy fats, specifically medium-chain triglycerides (MCTs) which makeup the bulk of coconut oil. MCTs have a fast rate of oxidation which results in an increase in energy expenditure and a decrease in weight gain (while also being amazing for your brain, hormones and satiety!)
Coconut yogurt also carries a healthy dose of probiotics which are super beneficial for your gut.
Dates: Dates are full of vitamin A, a vitamin that helps keep your eyes sharp and gives your skin a healthy glow. Their fiber content can help you feel satisfied and they are packed with metabolism-boosting magnesium, which also helps keep your teeth strong and prevents osteoporosis.
Dark chocolate chips: Magnesium is needed for more than 300 biochemical reactions in the body, which is scary when most adults are deficient in it. Well, the best news? Dark chocolate is a great source of it! It is also rich in minerals, such as iron and zinc and contains high levels of antioxidants.
Flavor variations to try:
Try adding in 1/4 cup cacao or cocoa powder for a chocolate flavor. Add in a few tablespoons of cashew or almond butter. Add in chopped pecans and omit the espresso powder for caramel pecan. Add sprinkles or other fun toppings for a birthday party. Serve in an ice cream or waffle cone for the ultimate treat!

Ingredients

  • 1 banana, sliced, frozen 
  • 1 cup thick Greek or coconut yogurt
  • 1 13.5 oz can coconut cream, full fat (solid part only) *see note below
  • 1 cup dates, soaked 30 minutes and drained
  • 1 teaspoon instant espresso powder
  • 1 teaspoon vanilla extract
  • 1/4 cup dark chocolate chips, optional

Instructions

  • Note: Place the can of coconut cream or milk in the fridge or freezer for at least 1-2 hours before making this ice cream to allow coconut cream to separate.
    Open chilled can and scoop out the cream that has separated and set hard on the top. Save the remaining coconut water to use in a smoothie, drink, or discard.
    Add the hardened coconut cream and all of the other ingredients except the chocolate chips (or other mix-ins you are using) in a blender and blend until smooth. Taste and adjust as you would like. Add in the mix-ins and pulse a couple of times to mix in.
    The mixture will be the consistency of soft serve at this point or the typical “fro yo” and if you like it soft then eat it right away.
    But if you would like to firm it up a little, just add it to a storage container and freeze for an hour or two.
    If fully frozen, let thaw for 10-15 minutes before eating for the best texture.
