Healthy Tahini Freezer Fudge

This healthy Tahini Freezer Fudge is made with just a few wholesome ingredients and has a melt-in-your-mouth cookie dough flavor!
Who doesn’t like fudge?! It’s the epitome of dessert – a rich chocolate fudge slice, or basically anything made with the cacao bean, right?! But today’s recipe doesn’t contain any cocoa powder or is even full-on chocolate.
Instead, it’s a different type of fudge, an easy recipe (and the perfect healthy treat!) made of whole foods ingredients like creamy tahini, honey and coconut oil.
Tahini, the main ingredient, is pure sesame seed paste, which adds a slightly bitter, nutty flavor. Combined with the sweetness of honey and the properties of coconut oil, mixing these together allows the fudge to harden up in the freezer, becoming a chewier texture that you can enjoy as dessert!

Haha… well this unusual fudge recipe is a delicious reason to set that chocolate aside for a change. I love the toasty tahini flavor, the familiar vanilla, and the creamy coconut. With a handful of ingredients, this freezer fudge is an easy treat or snack, to keep stashed away for …well, any reason!

This recipe is the perfect treat if you love coconut like I do. I’m obsessed with coconuts, they are my favorite ingredient in desserts and healthy snacks.

It now comes in a variety of forms from water to milk, cream, sugar, butter, oil, flour, dried and shredded allowing for a variety of creative ways to add coconut to a healthy diet.
Coconut contains a unique type of medium chain saturated fat called lauric acid that research shows raises HDL or "good" cholesterol levels, which lowers overall heart disease risk.
As a plant food, coconuts also contain disease-fighting phytochemicals or antioxidants. Research suggests that coconut products helps boost metabolism which is helpful if excess bodyfat needs to be lost.
Just one scoop of coconut oil delivers a wide-range of healing properties. Produced in its most natural state, coconut oil will benefit you, your children and your pets. I put some into my dogs dinner regularly.

Ingredients

  • 3/4 cup tahini sesame seed butter
  • 1/4 cup coconut oil, melted
  • 3 tablespoons honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 cup chocolate chips
  • Pink or sea salt - optional

Instructions

  • Mix together the melted coconut oil, honey, tahini and vanilla in a medium bowl, until a creamy texture forms.
    Once the fudge mixture is fully incorporated, mix in the chocolate chips.
    Pour the tahini mixture into a 5 x 7-inch loaf pan lined with parchment paper.
    Make sure it is poured medium-thick, as in the image.
    Place the fudge in the freezer for about 2 hours to chill. Once frozen, remove from the freezer and cut into 12 squares of fudge.
    Store in an airtight container in the freezer for up to 3 months.
    Although this is a freezer fudge, allow it to thaw at room temperature if you would like a softer texture, before eating.
    Recipe Notes
    Swap out the chocolate chips for white chocolate chips and funfetti sprinkles, to make this party themed!
    Dried fruits like cranberries, apricots, or raisins can provide a chewy texture as add-ins!
    Make this a salted tahini fudge by sprinkling some coarse sea salt on top, before freezing it.
