Healthy Mint Fudge With Chocolate Frosting

Maybe you have a restricted diet like gluten free, keto, vegan, paleo, dairy free, grain free, sugar-free, the list goes on...So what's a girl to do?! Is it eating insanely delicious (but secretly healthy) desserts? Yesss, me too!How can such a insanely decadent sweet treat like this recipe be healthy I hear you asking.Well….for starters we swap the less desirable ingredients for natural, REAL-food. You would never guess this fudge is actually *good* for you and you can eat it and still fit into your jeans. 😉#winningThis is a recipe for super silky, mint chocolate fudge that is loaded with healthy ingredients. Sounds too good to be true. But it's REAL. What's the secret silky ingredient? It's avocado! Who says avocados are only good for guac? Not only do they make such a fun green color, but they taste amazing. Seriously so creamy, smooth and decadent. Once you sink your teeth into this fudge, you will be amazed at the texture.And if you are worried about fats in avocados, don’t be. They are good fats - so satiating, keeping you full and satisfied. Not to mention radiant skin, shiny hair and strong nails. Their fat is mainly monounsaturated fatty acids, or MUFAs, which effectively block plaque buildup in the arteries. (good for your heart!) They are high fiber - good for your gut– so we have happy bellies.Avocados are nutrient-rich, full of minerals, including calcium, iron, magnesium, potassium, copper, manganese, phosphorus and zinc. They are packed with high levels of fat-soluble vitamins A, E, and K, and water-soluble vitamins C and B (they have B1, B2, B3, and B6!). They also contain thiamine and riboflavin.Can this mint chocolate fudge get any better? Yes.. it tastes sinfully good, but it's totally guilt-free. Its such a light, refreshing, and healthy dessert or snack. To make it even more epic, its topped with a beautiful chocolate coconut frosting which can be used on top of anything - cakes, brownies, desserts of all types or pipe onto muffins or cupcakes or for a simply divine treat top smoothies or smoothie bowls with a dollop.You're welcome!

Ingredients
Creamy Mint Layer
- 1 cup cashews, soaked 3+ hours and drained
- 2 medium avocados, peeled, deseeded
- 1/4 cup cashew or almond butter
- 1/4 cup coconut oil, melted
- 2 tablespoons honey or maple syrup
- 1-2 teaspoons mint extract - to taste
Chocolate Coconut Frosting
- 1 13.5 oz can coconut cream, full fat (solid part only). See note below.
- 1 cup chocolate chips
Instructions
Creamy Mint Layer
- Place the can of coconut cream in the fridge or freezer for at least 1-2 hours before making the frosting to allow coconut cream to separate.Line an 5x5 or 6x4 inch pan or similar sized dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the fudge out easier for cutting.Place cashews into a food processer and process until broken down and crumbly. Add avocados, cashew butter, coconut oil, honey and mint extract and continue to process until smooth and creamy. Depending on the power of your food processor or blender it might take a minute or two to get it smooth. Stop and scrape down the sides of the blender bowl if needed. Taste test and add more honey or mint extract if you think it needs it.Scoop out the mixture and spread out evenly into your pan or dish with a spatula or back of a spoon. Refrigerate while you prepare the frosting.
Chocolate Coconut Frosting
- Open chilled can and scoop out the cream that has separated and set hard on the top. Save the remaining coconut water to use in a smoothie, drink, or discard.In a mixing bowl, add the chilled coconut cream and set aside.Place chocolate chips in a small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Add the melted chocolate into the mixing bowl and whisk together with the coconut cream until thick and glossy. Cover the bowl and refrigerate for at least 1-2 hours to thicken.Remove the bowl from the refrigerator. Using a stick mixer, beat together the firm frosting until light and fluffy.Remove the fudge from the refrigerator and top with the whipped frosting.Cut into 16 or more smaller squares to serve.Place the fudge slice in an airtight container and store it in the fridge for up to a week or freezer for up to 3 months.
