Healthy Mini Protein Lemon Cheesecakes
These gorgeous little delights are so easy to make and bursting with flavor, using good-for-you ingredients. Always without sacrificing flavor, of course.For this reason, I never ever use a graham cracker crust, something that most cheesecake type recipes suggest. A “from scratch” nut base works well with the cheesecake filling, and pecans are heart-healthy with antioxidants and anti-inflammatory properties. You could use almonds or walnuts instead. I prefer the buttery taste of the pecan, but use whatever you have on hand.Cheesecake is one of my favorite desserts and if love cheesecake too, but don’t need an entire cheesecake in the house, try mini cheesecakes instead. Ingredients
Base Crust
- 1 cup pecans or walnuts
- 1/2 cup dates, soaked 30 minutes and drained
- 1/2 cup old fashioned oats
- 1/2 cup desiccated coconut
- 1 teaspoon vanilla extract
Creamy Lemon Filling
- 1 cup cream cheese
- 1 cup thick Greek yogurt, plain
- 1/4 cup honey or maple syrup
- 2 scoops protein or collagen powder
- 2 tablespoons coconut oil, melted
- 1 lemon, juice and zest
Topping
- Fruit puree
- Fresh chopped fruit
- Chia Jam – recipe below in notes
Instructions
Base Crust
- Place cupcake liners in a 12-cup muffin tin.Add crust ingredients to a food processor and process until mixture is well combined. Be careful not to over process as its nice to have texture variance and different sized “bits” in your cheesecake bases.Divide mixture evenly among the cupcake liners, about 1 tablespoon for each cup. Press the mixture down with the back of a spoon into the cup to form a bottom crust.
Creamy Lemon Filling
- Wipe out processor and add in filling ingredients. Process until mixture is smooth and creamy, about a minute or so.Divide cheesecake mixture evenly among cups, about 2 heaping tablespoons for each. Smooth top of each one evenly.Refrigerate for about 3 hours or freeze for about 1 hour, until cheesecake has set. Remove from cupcake liner when ready to eat. Top with fruit or jam.Store in an air tight container in the refrigerator for up to 5 days, or freeze cups, store in a freezer bag, and let defrost on the counter for about 10 minutes when ready to eat.
