Servings 3
Ingredients
- 3 bananas, ripe, firm
- 1/2 cup peanut (or any other nut) butter
- 1 tablespoon peanut or almond flour
- 2 tablespoons honey or maple syrup
- 1/4 cup peanuts, roasted, chopped
Chocolate Drizzle
- 1/2 cup chocolate chips
- 1 teaspoon coconut oil
Instructions
- Peel your bananas, cut them in half and then slice those halves vertically so you are left with 4 pieces per banana (12 pieces total) that have a long, flat section. Place them on your lined baking sheet. In a mixing bowl, stir together the peanut butter, peanut flour and honey until well combined and thick.Spread about 1 tablespoon of the peanut butter mixture on top of the flat part of your sliced bananas then add crushed peanuts.
Chocolate Drizzle
- Place chocolate chips and coconut oil in small dish and microwave at 50% power with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once melted, drizzle the chocolate over top of the peanut butter/nut covered bananas. Sprinkle another touch of crushed peanuts on top of the chocolate.Place the banana "snickers" in the freezer until hardened.NotesFrozen bananas have a tendency to thaw really quickly, so I like to store these in the freezer at all times.Once they have frozen initially on the baking sheet, you can transfer them to an airtight container or a freezer-safe zip-lock bag until ready to enjoy.I like to eat these straight out of the freezer, but if you think they are too hard, you can let them sit at room temperature for a few minutes before enjoying.
