Healthy Coconut Protein Bars
Ingredients
Bar Base
- 1 cup desiccated coconut
- 1/2 cup vanilla protein powder
- 1/4 cup coconut oil, melted
- 1/4 cup honey or maple syrup
- 1/4 -1/2 cup water as needed
- 1 teaspoon vanilla extract
Chocolate Drizzle
- 1/2 cup chocolate chips
- 1 teaspoon coconut oil
Instructions
- Place desiccated coconut, protein powder, coconut oil, honey, ¼ cup water and vanilla extract into a food processor and process until the mixture reaches a smooth, dough like consistency.If the mixture seems a little dry, add more water a tablespoon at a time until it comes together into a smooth dough. Taste test and add more honey or vanilla extract if you think it needs it.Use a cookie dough scoop or grab portions of the dough. Shape into 6 even bars of your desired length and thickness. Place shaped bars onto a parchment lined cookie sheet and freeze for 10-15 minutes, then melt the chocolate drizzle.
Chocolate Drizzle
- Place chocolate chips and coconut oil in small dish and microwave with 15 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Drizzle the melted chocolate over the bars either using a spoon or a Ziplock bag with the corner cut off.Place the bars back in the fridge to let the chocolate set completely.Store in the fridge for up to 1 week or freezer for up to 3 months.Tips & VariationsExtra protein: Add collagen peptides or extra protein powderNut-free: Keep as is, or add sunflower seed butter for creaminessVegan: Use maple syrup and plant-based proteinChocolate coconut: Mix chocolate chips through the base.
