Ingredients
Bar Base
1cupdesiccated coconut
1/2cupvanilla protein powder
1/4cupcoconut oil, melted
1/4cuphoney or maple syrup
1/4 -1/2cupwater as needed
1teaspoonvanilla extract
Chocolate Drizzle
1/2cupchocolate chips
1teaspooncoconut oil
Instructions
Place desiccated coconut, protein powder, coconut oil, honey, ¼ cup water and vanilla extract into a food processor and process until the mixture reaches a smooth, dough like consistency.If the mixture seems a little dry, add more water a tablespoon at a time until it comes together into a smooth dough. Taste test and add more honey or vanilla extract if you think it needs it.Use a cookie dough scoop or grab portions of the dough. Shape into 6 even bars of your desired length and thickness. Place shaped bars onto a parchment lined cookie sheet and freeze for 10-15 minutes, then melt the chocolate drizzle.
Chocolate Drizzle
Place chocolate chips and coconut oil in small dish and microwave with 15 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Drizzle the melted chocolate over the bars either using a spoon or a Ziplock bag with the corner cut off.Place the bars back in the fridge to let the chocolate set completely.Store in the fridge for up to 1 week or freezer for up to 3 months.Tips & VariationsExtra protein: Add collagen peptides or extra protein powderNut-free: Keep as is, or add sunflower seed butter for creaminessVegan: Use maple syrup and plant-based proteinChocolate coconut: Mix chocolate chips through the base.
