Ingredients
- 1 13.5 oz can coconut cream, full fat solid part only see note below
- 2 tablespoons peanut (or any other nut) butter
- 2 tablespoons cocoa powder
- 1 tablespoon honey or maple syrup
- 1 teaspoon vanilla extract
Toppings
- Whipped coconut cream – recipe below in notes
- Shaved chocolate
- Chopped nuts
- Hemp seeds
Instructions
- Note: Place the can of coconut cream or milk in the fridge or freezer for at least 1-2 hours before making this mousse to allow coconut cream to separate.I store a can in the fridge so there’s always one ready to go. Be sure to use full-fat canned coconut cream for this recipe. Try not to shake the can, because you want the ream separate from the water underneath.)Open chilled can and scoop out the cream that has separated and set hard on the top. Save the remaining coconut water to use in a smoothie, drink, or discard.Transfer the hardened cream only to a bowl. Using either a stand mixer or hand beaters (or a fork and a ton of strength and patience), whip the cream until smooth. Using a low speed, slowly start to whip the coconut cream (using the same techniques you would for regular dairy cream). Add nut butter, cocoa, honey, and vanilla extract and gradually work to a higher speed until the ingredients are well combined and you have incorporated enough air for the desired texture. Top with your favourite toppings like shaved chocolate, chopped nuts for a bit of added crunch or a handful of fresh berries and serve immediately. The Chocolate Mousse will also keep well in the refrigerator for several days.Plain delicious whipped coconut cream recipe is below in notes.
