Healthy Chocolate Coconut Mousse

So, what’s the big secret? It’s no secret really, but it is a secret weapon that has the low carb, Paleo and clean eating world going mad. And most recently….me too.
Refrigerated coconut cream is the saviour of many low carb desserts, acting as whipped cream or pudding with the added health benefits of ‘good for you fats.’
This Chocolate Coconut Mousse recipe is the perfect treat if you love coconut like I do.  I’m obsessed with coconuts, they are my favorite ingredient in desserts and healthy snacks.
The world is going coconuts. Following the popularity of coconut water, a broad spectrum of foods derived from the humble coconut is available. It now comes in a variety of forms from water to milk, cream, butter, oil, flour and shredded allowing for a variety of creative ways to add coconut to a healthy diet.
Coconut contains a unique type of medium chain saturated fat called lauric acid that research shows raises HDL or "good" cholesterol levels, which lowers overall heart disease risk.
As a plant food, coconuts also contain disease-fighting phytochemicals or antioxidants. Research suggests that coconut products helps boost metabolism which is helpful if excess bodyfat needs to be lost.
Just one scoop of coconut oil delivers a wide-range of healing properties. Produced in its most natural state, coconut oil will benefit you, your children and your pets. I put some into my dogs dinner regularly.

Optional Add On –
 If you make this Chocolate Mousse, I recommend you absolutely have to make some whipped coconut cream for the topping (recipe below in notes). Then sprinkle with more shaved chocolate and mentally prepare yourself for the richest and most decadent dessert that’s no longer low in fat (because high fat is better for you, until they decide otherwise), but full of beautiful silky smooth chocolate.

I’m sure there have been many foodies before me to have done this but I had to share this one. Because not only is it whipped-and-so-thick-and-creamy-and-rich-that-your-mouth-waters-while-eating-this-thing…you then get the crunch of shaved dark chocolate in every mouthful.

Ingredients

  • 1 13.5 oz can coconut cream, full fat solid part only see note below
  • 2 tablespoons peanut (or any other nut) butter
  • 2 tablespoons cocoa powder
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon vanilla extract

Toppings

  • Whipped coconut cream – recipe below in notes
  • Shaved chocolate
  • Chopped nuts
  • Hemp seeds

Instructions

  • Note: Place the can of coconut cream or milk in the fridge or freezer for at least 1-2 hours before making this mousse to allow coconut cream to separate.
    I store a can in the fridge so there’s always one ready to go. Be sure to use full-fat canned coconut cream for this recipe. Try not to shake the can, because you want the ream separate from the water underneath.)
    Open chilled can and scoop out the cream that has separated and set hard on the top. Save the remaining coconut water to use in a smoothie, drink, or discard.
    Transfer the hardened cream only to a bowl. Using either a stand mixer or hand beaters (or a fork and a ton of strength and patience), whip the cream until smooth.
    Using a low speed, slowly start to whip the coconut cream (using the same techniques you would for regular dairy cream). Add nut butter, cocoa, honey, and vanilla extract and gradually work to a higher speed until the ingredients are well combined and you have incorporated enough air for the desired texture.
    Top with your favourite toppings like shaved chocolate, chopped nuts for a bit of added crunch or a handful of fresh berries and serve immediately. The Chocolate Mousse will also keep well in the refrigerator for several days.
