This real-food coconut and cashew butter fudge is easy – it only takes six base ingredients and comes together in minutes. If you have ever wanted to make your own healthy fudge then this is the recipe is for you! An easy, delicious recipe using creamed coconut, cashew butter, protein powder, honey and vanilla.
Coconut butter fudge has been my go-to treat for a few years now. When I get a craving, it’s usually for sweets and fats. Coconut butter fudge always delivers the goods! It is such a satisfying snack that I never need more than one or two small pieces to feel content. When blended with super star cashew butter it’s a delicious paring. A match definitely made in heaven.
Fudge is a great dessert too that is always a crowd pleaser. If you are looking for a healthy fudge recipe, you have got to try this one! It comes together quickly and the coconut and cashew butter gives it a sweet nutty flavor. This type of fudge is generally called “freezer fudge” which means it’s a new way of making fudge that is healthy and easy. It has been circulating around the internet for a little while now.
Essentially, it has a healthy fat, such as coconut cream, butter or oil, sometimes a nut/seed butter, some kind of sweetener along with a flavouring like vanilla or cocoa powder for a chocolate version. Depending on which ingredients you use will alter the taste/type of fudge.
Instead of needing to melt truckloads of sugar and butter together in a saucepan, and cooking it to an exact high temperature…and then following a precise technique to get just the right texture…with this recipe you simply gently melt the fats together, add the other ingredients then pop it in the freezer to set up.
The result is a healthier, lighter, yet still fudge-y, fudge that’s naturally sweetened and so much better for you than traditional fudge. A win win in my book! Rich, smooth, squares of fudge bursting with goodness. That’s what we have going on here today, my friends. Count. Me. In!
This recipe is a ‘healthified’ take on traditional sugar-loaded candy bars but made with wholesome ingredients. For those days where you are craving a candy bar, but want a healthy, delicious, low-effort way to enjoy the same sweet treat, I’ve got you covered with this recipe.
With just a few healthy ingredients you can create a truly delectable bar that tastes better than any store bought version. I’ve included protein or collagen powder to add a little extra protein. When you include it in any meal (even a dessert/snack like this), you will be more satisfied and less likely to keep eating due to the impact protein has on reducing ghrelin, your hunger hormone, and boosting peptide YY (which makes you feel full).
It’s incredibly simple to make and truly delicious. You will love it! It’s great for gifts, dessert platters, or anytime you want a piece of deliciousness.
But be warned, its hard to stop at just one piece! I would put it in the category of “bet you can’t eat only one!” But that’s ok, as its healthy and won’t do any harm to your healthy eating plan (if you are reasonable about it!) 😊
