Gingerbread Bites – Homemade “Larabar” Balls

Well it looks like I am just a big ol’ copycat. That’s right as today, is a snack day so I am making some copycat Larabars but in a ball form.

Sweet, spiced, and so easy to make, these no bake Gingerbread Cookie Protein Balls are a perfect healthy on-the-go snack. These bars are inspired by Larabar’s seasonal gingerbread flavor, but much easier to find. They tend to frequent food processors, so look there first. Dark brown, sticky, cinnamon-fragrant, just sitting and waiting to be turned from dough bar to ball.

I do enjoy Larabars and its one snack food I do buy in the store when out and about and hungry. I make them at home, too, from time to time, but we go through so many, as my family love them that it’s hard to keep up.

This gingerbread version is made with almonds, cashew butter and sweetened with dates. They are soft, chewy, perfect for fuel, and make an ideal treat or post-workout snack. Along with the favorite sweet and spicy flavors that add a hint of warmth all rolled into an easy, no-bake snack ball.

It only took a few minutes of experimenting (thanks to their simple ingredients list) and they taste just like the original Larabar! These gingerbread protein bites embrace all the classic flavors of ginger and cloves but with a little bit of a protein twist.

Only a few simple ingredients and these little bites come out ultra chewy, filling, and perfect for on-the-go days because they are so full of healthy fats and protein!

Adding the protein powder makes the macro nutrients (protein, carbs, fats) more balanced as part of a modern healthy eating plan (rather than the ancient high carb, low protein baking). Protein powder also acts as a “flour” to the cheesecake and helps the ingredients stick together.

Life is too short to limit flavors to certain seasons (like the gingerbread Larabar), so if you feel like eating gingerbread, go make it! If you feel like making something that you would typically only make around the holidays or Christmas, do it. If it means I get to eat homemade gingerbread copycat Larabars year round, I am okay with that! That flavour is good enough to be eaten at all times, not just when someone says so!

These soft and chewy gingerbread protein balls are so easy to make – no dough chilling, no dough rolling, no cookie cutters required! They are delicious plain, and topped with a simple white chocolate drizzle topping. Gingerbread Bites - Homemade "Larabar" Balls|

These Gingerbread Protein Bites are simple, protein-rich and nutritious. Perfect for a quick snack, workout fuel, or dessert! Tastes like a gingerbread cookie, but with a boost of protein and no refined sugar.

Ingredients

  • 1 cup almonds, walnuts, or cashews
  • 1 cup rolled oats
  • 1 cup dates, soaked 30 minutes and drained
  • 1/4 cup cashew (or any other nut or seed) butter
  • 1/4 cup protein or collagen peptides powder, unflavoured or vanilla
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • Dash ground cloves optional
  • 1 tablespoon molasses, optional - for even more of a gingerbread flavour

White Chocolate Drizzle

  • 1/2 cup white chocolate chips
  • 1 teaspoon coconut oil

Instructions

  • Combine all ingredients,into the food processor and process until a sticky dough is formed.
    Scoop out 1 -1½ tablespoons lots and roll into 12 balls (or your preferred size) .
    Place balls in the fridge while you melt chocolate drizzle.

White Chocolate Drizzle

  • Place chocolate chips and coconut oil in small dish and microwave with 15 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted, drizzle over the balls using a spoon or a Ziploc bag with the corner cut off.
    Balls will keep in the fridge in an airtight container at least one week.
