Ingredients
1cupalmonds, walnuts, or cashews
1cuprolled oats
1cupdates, soaked 30 minutes and drained
1/4cupcashew (or any other nut or seed) butter
1/4cupprotein or collagen peptides powder, unflavoured or vanilla
1teaspoonground ginger
1/2teaspoonground cinnamon
Dash ground cloves optional
1tablespoonmolasses, optional - for even more of a gingerbread flavour
White Chocolate Drizzle
1/2cupwhite chocolate chips
1teaspooncoconut oil
Instructions
Combine all ingredients,into the food processor and process until a sticky dough is formed.Scoop out 1 -1½ tablespoons lots and roll into 12 balls (or your preferred size) . Place balls in the fridge while you melt chocolate drizzle.
White Chocolate Drizzle
Place chocolate chips and coconut oil in small dish and microwave with 15 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once melted, drizzle over the balls using a spoon or a Ziploc bag with the corner cut off.Balls will keep in the fridge in an airtight container at least one week.
