Fruit & Nut Chocolate Bark

Chocolate Bark is the easiest treat to whip up! Dark and white chocolate swirled together, then topped with nuts and dried fruit. Doesn’t get any simpler than that.
Whether you're making it for yourself, or to share with someone special, this simple and delicious chocolate always look good! With this simple, basic, EASY bark recipe (only 2 main ingredients!) you will have chocolate bark success every time.
I often call bark my “clean out the pantry” treat because that’s basically what I do when I’m coming up with flavors: I search through my pantry and take out any half used bags or packets of nuts or dried fruit or the dregs in the granola packet. EVERYTHING goes good with chocolate and it’s easy to personalize the recipe.
This recipe for Nut & Fruit Chocolate Bark was created in exactly this way. Using ingredients I found hanging around my kitchen, this unique and delightful dessert or snack combines my favorite nutrient dense foods into something new and inspiring.
And by choosing your toppings right and adding superfoods such as nuts, seeds, cacao nibs, coconut chips or goji berries, you are adding extra nutrition to your treat. Break into bite sizes pieces to share with friends and family, or package into bags to use as a 'thank you' gift.
Homemade chocolate bark is a great way of lifting plain chocolate to a higher level. And the beauty of it doesn’t reside in the end product only.
Making your own chocolate bark is such a fun way of being creative in the kitchen and something you can do with children. It’s not as messy as some other desserts, and your kids can let their creativity go wild.

Ingredients

  • 1 1/2 cups dark chocolate chips
  • 1 1/2 cups white chocolate chips
  • 2 tablespoons coconut oil, divided in half
  • 1 cup pecans and walnuts, roughly chopped
  • 1 cup dried apricots and cranberries, chopped

Instructions

  • Line a large baking sheet with parchment paper or a silicone mat. Place the dark chocolate chips along with 1 tablespoon of coconut oil in a microwave safe glass bowl or measuring cup. Heat for 1 minute, at 50% power, stir and heat an additional 30 seconds, stir again until smooth. Pour the chocolate across the lined baking sheet and spread it out with a spatula.
    Wipe the bowl clean and repeat the melting process with the white chocolate chips adding 1 tablespoon of coconut oil. Pour the white chocolate over the dark and use the end of a spoon or a spatula to swirl the two chocolates together.
    Or you can use the double boiler method to melt your chocolate - (pot of boiling water with a bowl resting on top) and coconut oil together.
    After the chocolate is swirled together, sprinkle with the chopped fruits and nuts. Let the chocolate harden at room temperature or in the refrigerator.
    Cut the bark into pieces once it has set. Store at cool room temperature or in the refrigerator.
