These logs really are so easy to make – all you need is a food processor and a few ingredients. You can happily store them in the fridge for up to a month, or in the freezer for up to three. I often keep this type of sweet treat in the freezer as I like the slightly chewier harder texture, but fridge is perfect too – try out both and see what you prefer.
Ingredients
1 cup dates soaked 30 minutes, drained
½ cup dried fruit (apricots, figs, pineapple or your choice soaked 30 minutes then drained)
1 cup nuts (pecans, cashews, walnuts, almond or your choice)
1 cup desiccated coconut
1 teaspoon vanilla essence
½ teaspoon cinnamon or any other spice
Instructions
Grind dry nuts in a food processor, add dates and process further until combined add, vanilla, spice, and dried fruit a few pieces at a time.
Shape into small logs ½ – ¾ inch thick, and roll in dried coconut.
Chill until firm.
