This Frozen Yogurt Cashew Bark is easy to make with yogurt, sliced bananas, melted chocolate, granola and nuts. It’s the perfect healthy freezer snack, simple to customize  and a fun and healthy treat for a late night snack or after a workout.

Plus, you can use any yogurt you like but I prefer to use a thick full fat Greek-style yogurt or cashew based yogurt so its nice and creamy and not icy once frozen.

You might be wondering what bark is anyway!

It is another “As Seen on TikTok” recipe. I saw this and knew I had to make it! It’s a yummy treat that you can keep in the freezer and grab a chunk whenever you feel the need for a sweet treat!

Bark is simply layers of fruit, nuts and chocolate then frozen and broken into chunks for a healthy delicious dessert or treat.

Bark is very easy to make, packed with delicious flavors, and the perfect combination of creamy, fruity, and crunchy. These bites of heaven are perfect for satisfying your sweet tooth without feeling guilty. They are the perfect ‘to die for’ no bake treat.

All manner of bark recipes have gone viral. I love how amazing new food trends are being created on internet websites like TikTok and some of them go viral and get loads of attention.

I have tried quite a few of these viral TikTok recipes recently and they do not disappoint. Its not every day that a food trend exceeds my expectations, but this one is definitely a winner. And this one is honestly just so adorable.

As soon as I saw this trend pop up, I had to make. I mean, how cute are these chunks of frozen yogurt with all sorts of chocolate, nuts and fruit stuck to it? Almost too cute to eat … key word being almost.  lol.

And by choosing your toppings right and adding superfoods such as nuts, seeds, coconut chips or dried fruit you are adding extra nutrition to your treat.

Break into bite sizes pieces to share with friends and family, or package into bags to use as a ‘thank you’ gift.

Homemade bark is a great way of lifting plain chocolate to a higher level and making it a healthier treat. And the beauty of it doesn’t reside in the end product only.

Making your own bark is such a fun way of being creative in the kitchen and something you can do with children. It’s not as messy as some other desserts, and your kids can let their creativity go wild.

Dangerously easy to make with endless combinations, these make beautiful holiday gifts or, you know, as they say – treat yo self!

I’m really so excited with how this recipe turned out. Perfectly sweet, salty, tart, and crunchy. You have to make it! I’m obsessed and already need to make more.

You don’t really even need a recipe, or even to measure any ingredients, to make gorgeous bark – it’s about getting creative and using your favourite flavours.

 

Frozen Yogurt Cashew Bark

This frozen yogurt bark with banana, nut butter, chocolate and your favourite protein or collagen powder is the perfect refreshing snack. It's so easy to whip up, healthy and packed with protein.

Ingredients

  • 1 1/2 cups plain, full fat, thick Greek or cashew based yogurt
  • 1/2 cup cashew (or any other nut or seed) butter
  • 1/3 cup protein or collagen powder
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract

Toppings

  • 1/2 cup chocolate chips
  • 1 teaspoon coconut oil
  • 1 small banana, cut into slices
  • 1/4 cup granola, or chopped nuts

Instructions

  • Line a baking tray or sheet with parchment paper.
    In a medium bowl, add the yogurt, nut butter, honey, vanilla and protein powder. Mix well until smooth and combined.
    Spread the yogurt mixture onto the prepared baking sheet and use a spatula to spread evenly into ¼-½ inch thick rectangle shape.
     

Chocolate Drizzle Topping

  • Place chocolate chips and coconut oil in small dish and microwave at 50% power with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Use a spoon to add dollops of the melted chocolate evenly spread out on the yogurt mixture. Use a toothpick to gently swirl the chocolate into the yogurt mixture.
    Top with banana slices and sprinkle with the granola and/or mixed nuts.
    Place the baking sheet in the freezer for about 3 hours or until the yogurt is firm. Remove the pan from the freezer.
    Cut or break apart the yogurt bark into pieces and serve. If the bark is too hard, let it sit out for a few minutes before cutting or breaking into chunks.
    Store in an airtight container or resealable freezer bag in the freezer for up to 3 months.
