Frozen Yogurt Cashew Bark

This frozen yogurt bark with banana, nut butter, chocolate and your favourite protein or collagen powder is the perfect refreshing snack. It's so easy to whip up, healthy and packed with protein.

Ingredients

  • 1 1/2 cups plain, full fat, thick Greek or cashew based yogurt
  • 1/2 cup cashew (or any other nut or seed) butter
  • 1/3 cup protein or collagen powder
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract

Toppings

  • 1/2 cup chocolate chips
  • 1 teaspoon coconut oil
  • 1 small banana, cut into slices
  • 1/4 cup granola, or chopped nuts

Instructions

  • Line a baking tray or sheet with parchment paper.
    In a medium bowl, add the yogurt, nut butter, honey, vanilla and protein powder. Mix well until smooth and combined.
    Spread the yogurt mixture onto the prepared baking sheet and use a spatula to spread evenly into ¼-½ inch thick rectangle shape.
     

Chocolate Drizzle Topping

  • Place chocolate chips and coconut oil in small dish and microwave at 50% power with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Use a spoon to add dollops of the melted chocolate evenly spread out on the yogurt mixture. Use a toothpick to gently swirl the chocolate into the yogurt mixture.
    Top with banana slices and sprinkle with the granola and/or mixed nuts.
    Place the baking sheet in the freezer for about 3 hours or until the yogurt is firm. Remove the pan from the freezer.
    Cut or break apart the yogurt bark into pieces and serve. If the bark is too hard, let it sit out for a few minutes before cutting or breaking into chunks.
    Store in an airtight container or resealable freezer bag in the freezer for up to 3 months.
