Are these Frozen Yogurt Berry Bites too pretty to eat? Never!
A healthy treat that looks as fancy and indulgent as this yummy looking dessert is just the look I was going for here! It is difficult to take any credit for it though.
The beauty comes from the splendid colors of berries.The contrast of reds, purples against the yogurt and soft beige crust allows us to eat this with our eyes before we take the first bite.
These babies are fun to make, delicious to eat, and full of simple and healthy ingredients, and pretty too. This recipe has a simple oaty base then a yogurt layer topped with different coloured berries..
Protein packed, no-bake, and perfect to stash in your freezer to grab whenever the craving for a special 'something' hits. The recipe also makes a super delicious dessert, loaded with protein, fruits and nuts.
The beauty of this recipe is that you can add as much (or as little) sweetener as you like, use different nuts or seeds in the base or any fruit and berries that you like to make it in your way and taste.
Most fruit will work well in these bites, chop it, slice it, or use small fruit whole, like all sorts of berries, cherries, an apricot, and some green grapes.
The more colors you use the prettier they will be. You can use a flavored yogurt as the base for more sweetness and flavour. The base layer uses a few simple ingredients, but you can also use your favorite ready-made granola. It’s not really a crust, it kind of mixes in with the yogurt at the bottom of each muffin cup.

Ingredients

Base Crust

  • 1 cup oats, instant or quick
  • 1/2 cup desiccated coconut
  • 4 tablespoons peanut (or any nut) butter
  • 2 tablespoons honey or maple syrup

Yogurt Layer

  • 2 cups Greek yogurt of your preference
  • 2 tablespoons coconut flakes
  • 1 1/2 cups fresh berries, chopped

Instructions

Base Crust

  • Line a 12-cup cupcake or muffin pan with cupcake liners.
    In a small mixing bowl, combine honey and peanut butter. Add oats and mix well. Press 1 1/2 tablespoons into the bottom of each muffin cup.

Yogurt Layer

  • Top with 2 tablespoons yogurt covering the crust.
    Top with fresh chopped berries, and coconut flakes.
    Place in the freezer for 20 minutes to set.
    Serve cold and refrigerate for 48 hours or freeze for up to seven days.
