These healthy, no bake protein brownies are the perfect snack or sweet treat! Made with just a handful of ingredients, this recipe could not be easier. They are so fudgy, chewy, and melt in your mouth good! Refined sugar free, packed with protein, energizing carbs, and healthy fats, these little bites make a great, balanced treat option!
I have a special place in my heart for no bake desserts. They were the first kind of recipes I started experimenting with when I started making healthier treats. No bake brownies in particular, they somehow taste like you are eating brownie batter in a dense, chewy, fudgy brownie form. WILD.
If you are a chocolate lover like me, these are the treat for you! Ultra fudgy, chewy brownie bites with chocolate ganache, and all natural sprinkles, these have it all! They have all the flavor and texture of a fudge brownie with no eggs, no flour, and no refined sugar. The best part is that they couldn’t be easier to make and come together in a food processor.
Protein is getting a lot of hype right now and for good reason. When I first started studying nutrition, I quickly hopped on the protein train. I try to aim for 30g of protein at each meal and ensure my snacks in between have a little. Another great thing about protein, is when you pair it with your sweet treats and desserts, it helps prevent blood sugar spikes.
There is protein powder in this recipe to make sure we get the satisfying component of eating a sweet healthy treat. I find if the treat is not balanced (not enough protein and lots of carbs), it leaves me hungry a couple of hours after but when there is sufficient protein I stay full and happy for longer.
Because of this, I love adding protein into my snacks and treats as it’s an easy way to hit those protein goals – and tastes amazing! The brownie layer is made from a oat, almond, date, cocoa base which creates the chewy and fudgy texture that we all crave in a brownie! They are then layered with a luscious chocolate ganache that is ooey gooey in all the best ways!
This recipe is an ideal treat that is perfect for placating your sweet tooth when you are on a healthier eating kick. Don’t get me wrong, these brownies aren’t diet food. They are, however, made out of nutrient-dense ingredients such as oats, almonds, coconut, nut butter and naturally sweet dates and are healthy.
Back to these brownies….I know I say this… every single time I make them, but – these are the best brownies I’ve ever made or eaten. I mean it, they literally tick every single box. They are terribly indulgent and sinfully decadent.
They really have it all, the luscious fudgy texture, the intense chocolate flavour, packed full of nutrients, easy to make and taste so yummy! Keep some in your fridge to eat with any dessert or simply eat it them on their own.

Cosmic Brownie Protein Bites
Ingredients
Brownies
- 1 cup rolled oats
- 1 cup almonds
- 1 cup dates, soaked 30 minutes and drained
- 1/2 cup protein or collagen powder
- 1/3 cup almond or cashew butter
- 1/3 cup cocoa powder
- 1 teaspoon vanilla extract
- 1-2 tablespoons milk, as needed
Chocolate Ganache
- 1 cup chocolate chips
- 1/4 cup full-fat canned coconut cream or milk
- All-natural sprinkles
Instructions
Brownies
- Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bites out easier for cutting.Add the oats and almonds to a food processor, processing until they resemble flour (or at least mostly flour-like, it's okay to have a few chunks). Then add in the remaining ingredients, processing until a dough forms. You want the texture to stick together, and it may be slightly sticky to touch. If it seems a little dry, add milk a tablespoon at a time until it comes together.Add the dough to the pan and spread out evenly with a spatula or back of a spoon.
Chocolate Ganache
- Make the ganache by adding the coconut cream to a medium heat-proof bowl. Microwave for 30 seconds until it's warmed through. Pour the chocolate chips in and shake the bowl to make sure the milk covers them. Set a plate or something on top of the bowl to cover it and let it sit for 10 minutes without stirring. After the 10 minutes, stir the chocolate and milk together until it creates a ganache consistency. Then pour over the brownie base. Top with sprinkles. Place the brownies in the freezer for 2-3 hours before removing them from the pan and cutting into 16 bars or more smaller squares.Store in the fridge for up to 1 week or up to 3 months in the freezer.
