Ingredients

  • 1 cup cashews, soaked 3+hours and drained
  • 3/4 cup desiccated coconut (plus extra for rolling)
  • 1/2 cup dates, soaked 30 minutes and drained
  • 1/2 cup pineapple, dried
  • 1/2 cup vanilla or unflavoured protein powder
  • 1 tablespoon coconut oil
  • 1/2 teaspoon vanilla extract

Instructions

  • Add cashews, pineapple, desiccated coconut, dates, protein powder, coconut oil, and vanilla extract to a food processor.
     Pulse a few times until the mixture is combined into a thick, sticky dough. Be careful not to over process as its nice to have texture variance and different sized “bits” in your snack balls.
    Scoop tablespoon-sized portions and roll into 12-14 (more or less) balls.
    Roll each ball in extra shredded coconut if desired.
    Chill in the fridge for at least 30 minutes to firm up before serving.
    Store in an airtight container in the fridge for up to 1 week or freezer for up to 3 months.
    Thaw slightly for a few minutes before eating
