Coconut Caramel Sauce

Did you know that you can make thick and delicious, coconut caramel sauce from a can of coconut cream or milk?
Yes you can, and its sweet, golden, gooey and you will want in your life forever! And the best part is that there’s NO heavy cream, NO refined sugar and NO high fructose corn syrup required for this recipe!
Just four or five ingredients, and you are on your way to the perfect coconut caramel sauce. Seriously, this stuff is liquid gold. You will need to know how to make this amazing caramel sauce as you are going to want to drizzle it on EVERYTHING -  all over ice cream, on top of a smoothie or smoothie bowl, on top of cupcakes, cheesecake, brownies, apple pie, swirl it into your yogurt, chia pudding, breakfast oats, or even add a spoonful to your morning coffee.
You will probably just want to eat it straight up with a spoon. It makes a great gift for neighbours, teachers and friends too!
Sure, it take a while to reduce the coconut cream down to a thick delicious sauce but I can assure you its well worth the effort.
Stored in the refrigerator, the jar of caramel sauce will last for at least a week. I don’t know if it lasts longer or if it can be frozen, because I’ve never been able to keep a batch around long enough to find out!

Ingredients

  • 1 13.5 oz can coconut cream or milk, full fat
  • 1/2 cup honey or maple syrup,
  • 1 tablespoon coconut oil
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon sea salt

Instructions

  • In a large saucepan combine coconut milk or cream, coconut oil, honey and salt.
    Bring to a boil over medium heat. Reduce the heat to low and let simmer gently for about 40-50 minutes, stirring occasionally.
    As the mixture reduces and thickens, stir a little more often towards the end to keep it from burning. As well as getting thicker it will also slightly darken in colour.
    When it has reduced to about half (around 1 cup) remove from the heat, add the vanilla, then pour the caramel into a jar or bowl and let it cool.
    Use the sauce while it is still warm for the best spreading/pouring results.
    Store leftovers (if there are any) in the fridge.
