Coconut Butter Fudge Bites
If you are anywhere near the health food circles, you will have heard of coconut butter and oil by now. Coconut products have many healing properties and the coconut palm is often referred to as the tree of life. The coconut has been a star superfood for some time now and has brought great health benefits to numerous cultures because it’s considered a valuable source of both food and medicine.Coconut butter, oh my gosh its so good. It tastes like the most delicious, decadent, oh-so-bad-for-you treat. Except, it’s not. It’s actually really good for you. In fact, coconut butter packs a ton of health benefits:It’s rich in lauric acid, which boosts immunity and destroys harmful bacteria, viruses, and funguses. It actually boosts your metabolism, which aids in weight loss and increases energy levels. It’s packed with healthy fats, so you feel full longer. It’s full of essential amino acids, potassium, calcium, and magnesium. Basically, coconut butter is just plain awesome.The main difference between coconut butter and oil is that coconut oil is oil extracted from the coconut while coconut butter is made from the meat of the coconut, and includes actual pieces of coconut meat in it.Coconut butter is a rich spread made from ground-up, raw coconut meat that makes the nut butter-like consistency, though usually a bit more flaky. It is an excellent source of healthy fats, with 18g of fat in just two tablespoons. Ingredients
- 1/2 cup coconut butter, store bought or recipe below in notes
- 1/4 cup coconut oil
- 1/4 cup desiccated coconut
- 1-2 teaspoons honey or maple syrup (to taste)
Chocolate Drizzle (optional)
- 2 squares (2oz) chocolate
- 1 teaspoon coconut oil
Instructions
- Add coconut butter, and oil to a microwave-safe dish. Microwave in 15 second increments, stirring frequently, until melted.Add desiccated coconut and honey and mix until well combined.Pour into ice cube trays or 6 silicon moulds. Place in fridge until hardened, approximately 30 minutes to 1 hour.
Chocolate Drizzle
- Once the fudge bites have hardened, you can make the chocolate drizzle.Add dark chocolate and coconut oil together in a separate microwave-safe dish. Microwave in 15 second increments, stirring frequently, until melted.Using a spoon, drizzle the chocolate sauce on top of the fudge bites. Return to fridge until drizzle has hardened, or eat right away.These store best in an air-tight container in the fridge for up to a week, or in an air-tight container in the freezer for up to a month.
