What if I told you, you could eat brownie batter for breakfast, while also getting in 33 grams of protein at the same time? With this recipe, you can! Not to mention .. it’s freaking delicious! Cheers to dessert at 8am!

Overnight oats have always been a favorite of mine! Not only because they are the easiest thing ever to prep, but because they are so versatile. You can change the flavor profile so easily, without completely changing the entire recipe. That’s the kind of recipe I like!

They have been part of my morning routine for several years now and ultimately, have saved me countless hours in the kitchen. They also make an excellent protein-rich snack to tie me over in between meals!

All about changing it up, without having to reinvent the wheel! If you have never made an overnight oats recipe, this is a great introduction! Overnight oats is the meal prep friendly version of oatmeal. It’s quick and easy to make and sets you up for a stress-free morning (at least when it comes to food).

I make a double batch 2-3 times per week so that my mornings are stress-free. There’s nothing as reassuring as knowing that a delicious breakfast is already made for the upcoming day. And to top it off, it only takes 5 minutes to prep.

They are prepped the night before so you save time in the morning. Just double or triple the recipe to prepare a few in advance so you don’t have to make them every night! They provide a great source of protein, fibre and omega 3 fatty acids. Plus, they are so versatile, the flavour combinations are endless!

This recipe is incredibly delicious while still being extremely simple to make. If needed, you can also make a variety of adjustments and substitutions, depending on your preferences.

These little cups are rich tasting, but still light on the belly. Nutty almond butter and rich cocoa powder make for a satisfying combo that tastes a bit like a brownie batter, and whipped coconut cream takes it to that extra special level.

If you have never made whipped cream made with coconut cream, it is super simple. The hardest part is remembering to refrigerate the coconut milk overnight.

Tip: I keep a can of coconut cream in the fridge so I always can quickly whip up the coconut cream for any reason!  I use it to top smoothies, smoothie bowls, fresh fruit, protein desserts, chia puddings and so on. Any reason (excuse) is allowed for the yummiest, creamiest coconutty treat in the entire world!

Ingredients

  • 1 cup rolled oats
  • 2 tablespoons almond (or any other nut or seed) butter
  • 1 1/4 cups almond (or any other) milk
  • 2 scoops protein or collagen peptides powder
  • 2 teaspoons cocoa powder
  • 2 teaspoons honey or maple syrup
  • 1 teaspoon vanilla extract

Toppings Optional

  • Dollop of whipped coconut cream store bought or recipe below in notes
  • Chopped nuts
  • Fresh fruit or berries
  • Chocolate shavings
  • Seeds like hemp, chia or sunflower

Instructions

  • Combine oatmeal with almond butter, milk, protein powder, cocoa powder and honey. Mix well and allow to soak overnight.
    In the morning, divided into two portions, sprinkle with chocolate shavings, fresh berries, and a dollop of coconut whipped cream (recipe below in notes).
    You can eat it warm or cold depending on your preference.
