Chocolate Orange Chia Pudding

This healthy chocolate orange chia pudding recipe is perfect for breakfast, dessert, or an easy snack.
You will love this recipe because although this pudding is healthy and packed with good for you ingredients, it also tastes like an absolute dream.
Although its called a pudding, it makes a perfect breakfast with the creamy blend of coconut, chocolate, orange and chia to give you a morning boost!
It’s an easy make-ahead breakfast that’s packed with protein, fiber and Omega-3 fatty acids and an easy way to up your daily protein intake in a totally enjoyable way.
Creamy, rich, smooth and mousse like, it's your new favourite dessert. After trying it, I've made it countless times and I love having it on hand in the fridge when I have a craving for a ‘lil something’.  
It can be made as indulgent or healthy as you like! Topping it with whipped coconut cream will make it feel and taste so indulgent, you'll be left wondering how this is actually healthy. But it is and it's incredible!
In my mind, coconut and orange are the perfect pairing. The shredded coconut and coconut milk provide a slightly nutty flavor, while the orange makes the chia pudding perfectly citrusy. When we sweeten it with honey it makes it even more delicious!
I love having chia pudding prepared ahead of the week for a quick and easy snack, or even as a breakfast option paired with some granola and fruit. Its a wicked way to gain a burst of energy first thing in the morning or throughout the day!
If you have never made chia pudding before, the chia seeds gel up when setting in liquid (coconut milk for this recipe) and hold up to 10 times their weight in liquid! This makes them the perfect texture for pudding or what could be better than a decadent chocolate orange pudding that's healthy enough to eat for breakfast?

Ingredients

  • 1 cup full-fat, canned coconut milk
  • 2 tablespoons chia seeds
  • 2 tablespoons desiccated coconut
  • 1 tablespoon honey or maple syrup
  • 1 orange, juice and zest
  • 1/2 teaspoon vanilla extract

Toppings

  • whipped coconut cream recipe link below in notes
  • coconut chips
  • orange zest

Instructions

  • Mix together the pudding ingredients in a mason jar or a container with a sealable lid until they are well mixed. Set it in the fridge to thicken for about 20 minutes.
    After 20 minutes,remove from the fridge and whisk again. This step is super important to prevent the chia seeds from all clumping together!
    Remove the pudding from the refrigerator. Top with the optional whipped coconut cream, then sprinkle on the chocolate chips and orange zest.
    Store in an airtight container in the refrigerator for up to two days.
