- 1/2 cup vanilla or unflavoured protein powder
- 1/4 cup almond butter (or peanut butter)
- 2 tablespoons water (as needed to blend)
- 1/3 cup chopped mixed nuts (almonds, cashews, walnuts)
- 1/4 cup dried cherries
Chocolate Topping
- 1 cup dark chocolate chips
- 1 tablespoon coconut oil
Additional Topping
- Pinch flaky sea salt (optional but recommended)
Instructions
- Line a small tray with baking paper.In a food processor, blend dates until they form a sticky paste.Add protein powder and almond butter. Blend until combined.Add a little water if needed to help it come together into a thick dough.Press the mixture firmly into the lined tray into an even layer around ¼ to ½ inches thick.Sprinkle chopped nuts and dried cherries evenly over the base. Press lightly so they stick.
