Chocolate Nut Cherry Protein Bark

A no-bake, naturally sweetened protein bark made with a chewy date base, crunchy nuts, tart dried cherries, and a thick layer of dark chocolate. High in protein and freezer-friendly, this rich and satisfying treat is perfect for healthy snacking or dessert. 🍫🍒

Ingredients

  • 1 cup Medjool dates,pitted
  • 1/2 cup vanilla or unflavoured protein powder
  • 1/4 cup almond butter (or peanut butter)
  • 2 tablespoons water (as needed to blend)
  • 1/3 cup chopped mixed nuts (almonds, cashews, walnuts)
  • 1/4 cup dried cherries

Chocolate Topping

  • 1 cup dark chocolate chips
  • 1 tablespoon coconut oil

Additional Topping

  • Pinch flaky sea salt (optional but recommended) 

Instructions

  • Line a small tray with baking paper.
    In a food processor, blend dates until they form a sticky paste.
    Add protein powder and almond butter. Blend until combined.
    Add a little water if needed to help it come together into a thick dough.
    Press the mixture firmly into the lined tray into an even layer around ¼ to ½ inches thick.
    Sprinkle chopped nuts and dried cherries evenly over the base. Press lightly so they stick.

Chocolate Topping

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted, pour melted chocolate over the top and spread evenly.
    Sprinkle with flaky sea salt if using.
    Place in the freezer for 1–2 hours until set.
    Break or slice into pieces and store in the fridge or freezer.

  • Extra protein boost:
    Add collagen peptides to the base.
    Chocolate lovers version:
    Stir cacao powderinto the date mixture for a double chocolate base.
    Nut-free option:
    Use sunflower seed butter and swap nuts for pumpkin or sunflower seeds.
    Higher crunch:
    Add cacao nibs on top.
    Store in thefridge for a softer texture
    Store in the freezer for a firmer bite
    Keeps well for up to 2 weeks (if it lasts that long)
