Brookies (Chocolate Chip Cookie + Brownie Bars)
We may wonder what on earth a Brookie Bar is. Well, it’s a cross between chocolate chip cookies and brownies. This means you can have the best of both worlds with these no bake Brookie bars. Brownies and chocolate chip cookies are two of the most iconic desserts to ever exist which is why it made sense to combine them!It is an edible chocolate chip dough layered with edible brownie batter, and let me tell you it makes for one delicious treat. It sets up in the fridge or freezer, and makes for a super easy no bake dessert.These Brookies are a rollercoaster of flavors and textures. They are easy to make, protein packed and contain just 7 ingredients! You have a layer of decadent brownie and a salty sweet crunch of chocolate chip cookie and this makes them insanely delicious.They are definitely the most epic dessert I have made in a while, thick, gooey and extra rich! They aret he perfect dessert for when you can’t decide between brownies or chocolate chip cookies.Both the chocolate chip dough and the brownie batter have similar ingredients. The biggest difference is the cocoa powder that replaces some of the flour in the brownie batter. Both the batters start with some oat flour. I love the texture of oat flour and you also get some nutritional benefits with it as well. To sweeten both batters I used honey. You could also sub maple syrup, brown rice syrup or coconut sugar for a refined sugar free alternative. Then I added some cashew butter. This gives both batters that well known buttery flare. Next up is a little coconut cream. I know this may sound like an interesting ingredient, but it helps keep the bars from freezing solid while also maintaining the doughs classic smooth consistency.If you have never cooked with coconut cream before, it is the solid part on the top of canned coconut cream. I love adding it for a little lightness throughout the batter as well.After you mix both doughs, it is time to layer them.Its so simple, you just have to combine everything together in a bowl, press it in the pan, then chill it. The hardest part is waiting for the layers to set a little bit, but if you want it super gooey then eat the bars right away. When both doughs are layered together you get a taste of both in every bite. This sure keeps things interesting. A joining of two of the most popular dessert treats on the planet.These Brookie bars take only 15 minutes to make before they take a 30 minute rest in the fridge and are ready to cut and indulge! Ingredients
Note: Place both cans of coconut cream in the fridgeor freezer for at least 1-2 hours before making these bars to allow coconutcream to separate.
- 1 1/4 cups oat flour (rolled oats blended to a flour)
- 1 13.5 oz can coconut cream, full fat (solid part only) *see note below
- 1/2 cup cashew butter
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 cup chocolate chips
Brownie Layer
- 3/4 cup oat flour
- 1 13.5 oz can coconut cream, full fat (solid part only) *see note below
- 1/2 cup cashew butter
- 1/2 cup cocoa powder
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
Instructions
- Note: Place both cans of coconut cream in the fridge or freezer for at least 1-2 hours before making these bars to allow coconut cream to separate.
Chocolate Chip Layer
- Line a 5 x 7-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.Open one chilled can and scoop out the cream that has separated and set hard on the top. Save the remaining coconut water to use in a smoothie, drink, or discard.Add the hardened coconut cream to a medium bowl and add the rest of the cookie ingredients except for the chocolate chips and mix until a dough forms. Then fold in chocolate chips.Place in the bottom of the loaf pan. Press in an even layer and place in the freezer.
Brownie Layer
- Open second chilled can and scoop out the coconut cream that has separated and set hard on the top. Save the remaining coconut water to use in a smoothie, drink, or discard.Add the hardened coconut cream to a medium bowl and add the rest of the brownie ingredients and mix until a dough forms. Scoop dough out of bowl and on to the top of the cookie dough layer and press into an even layer.Place in the freezer for about an hour to set. Then slice in to 8-10 bars or smaller squares to serve.Keep leftovers in fridge for up to one week or freezer for up to 3 months. If frozen let thaw for 15 minutes before eating.
