Every time I reach for one in the freezer, I truly get excited! I get to eat a nourishing treat and give my body proper nutrients for the ultimate fuel.
In order to make the cookies blueberry flavored, you are going to need freeze- dried blueberries! However, you don’t need to use blueberries, many different fruits will work. What’s important is that they are freeze-dried.
Once blended into a dough, these delightful Blueberry Walnut Protein Cookies are formed into cookies, topped with yogurt and left to firm up in the freezer.
I’ve been making these kind of cookies for months now. Compared to store bought cookies, these no-bake versions are much healthier. As well as the freeze-dried fruit, they are packed with nutritious and filling ingredients such as oats, walnuts, coconut and almond butter along with a hit of protein powder, making a really substantial snack the whole family can enjoy.

That’s why I love incorporating protein powder in many of my desserts and snacks, they are so much more satisfying. Old fashioned recipes had truckloads of carbs and little else. Modern day recipes are more balanced in their macros (protein, carbs, healthy fats).

Sometimes you just want a simple dessert and when those cravings strike, reach for this blueberry, no bake cookies recipe. These treats are a bit like fudge in consistency, but with the wonderful chewiness of oats. They are perfectly sweet and richly nut buttery and balanced with warm hints of vanilla. They come together very quickly and satisfy the cookie, fudge and quick snack craving!
These would make the perfect snack or dessert when you need something that’s on the healthier side fast. I could see these making great gifts. Or make in a large batch and keep them in the freezer so there’s always a healthier treat on hand!
While you can store them in the freezer, I store mine in the fridge as they don’t last very long at my house! If you choose the freezer, just let the cookies thaw a bit before you eat them.

Blueberry Walnut Protein Cookies
Ingredients
- 1 cup freeze-dried blueberries (or any other freeze-dried fruit)
- 1 cup rolled oats
- 1 cup dates, soaked 30 minutes and drained
- 1 cup walnuts
- 1/2 cup desiccated coconut
- 1/3 cup almond (or any other nut) butter
- 1/4 cup any milk
- 1/4 cup protein or collagen peptides powder
- 1 teaspoon vanilla extract
Toppings Optional
- 1/2 cup thick Greek-style yogurt
- Fresh fruit or berries
Instructions
- Add all ingredients to a food processor and blend until a thick dough forms.If the dough seems a little dry, add more milk a tablespoon at a time until it comes together. You want it to stick together when you pinch it between your fingers.Form the dough into 10 cookies and add a dollop of yogurt to the top of each cookie. Place in the freezer for a couple of hours to set and enjoy!Store the cookies in an airtight container in the freezer for up to 3 months. Thaw for a few minutes before eating for the best texture.
