Blueberry Walnut Protein Cookies

Ingredients

  • 1 cup freeze-dried blueberries (or any other freeze-dried fruit)
  • 1 cup rolled oats
  • 1 cup dates, soaked 30 minutes and drained
  • 1 cup walnuts
  • 1/2 cup desiccated coconut
  • 1/3 cup almond (or any other nut) butter
  • 1/4 cup any milk
  • 1/4 cup protein or collagen peptides powder
  • 1 teaspoon vanilla extract

Toppings Optional

  • 1/2 cup thick Greek-style yogurt
  • Fresh fruit or berries

Instructions

  • Add all ingredients to a food processor and blend until a thick dough forms.
    If the dough seems a little dry, add more milk a tablespoon at a time until it comes together. You want it to stick together when you pinch it between your fingers.
    Form the dough into 10 cookies and add a dollop of yogurt to the top of each cookie.
    Place in the freezer for a couple of hours to set and enjoy!
    Store the cookies in an airtight container in the freezer for up to 3 months. Thaw for a few minutes before eating for the best texture.
