Blueberry Vanilla Yogurt Bars
Ingredients
- 1 1/2 cups rolled oats
- 1 cup dried blueberries
- 1 cup Greek yogurt, plain or vanilla
- 1 cup almonds or walnuts, chopped
- 1/4 cup honey or maple syrup
- 1/4 cup almond butter
- 1/4 cup coconut oil
- 1 teaspoon vanilla extract
Toppings Optional
- Fresh or dried berries
- Crushed peanuts
- Hemp or chia seeds
- Mini chocolate chips
Instructions
- Line a 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.In a mixing bowl, combine rolled oats, dried blueberries and chopped almonds. In a small saucepan, warm honey, almond butter and coconut oil over low heat, stirring until smooth. Remove from heat and stir in vanilla extract. Pour the honey-almond-butter-coconut oil mixture into the dry ingredients and mix until well combined. Press around half the mixture into the bottom of the prepared pan using a spatula. Spread Greek yogurt evenly over the top. Add the remaining oat mixture on top of the yogurt along with your choice of toppings. Freeze for 2-3 hours or until set. Remove from the pan and cut into 12-14 bars or more smaller squares. Keep refrigerated until ready to serve. Store in fridge for up to 1 week or freezer for up to 3 months. If frozen, let sit for 15 minutes for the bars to soften before eating.
