Blueberry Vanilla Yogurt Bars

Here your new favorite healthy snack! A healthy treat that looks as fancy and indulgent as this gourmet dessert tastes fabulous. It is difficult to take any credit for it though. The beauty comes from the splendid colour of blueberries.

Ingredients

  • 1 1/2 cups rolled oats
  • 1 cup dried blueberries
  • 1 cup Greek yogurt, plain or vanilla  
  • 1 cup almonds or walnuts, chopped   
  • 1/4 cup honey or maple syrup
  • 1/4 cup almond butter
  • 1/4 cup coconut oil
  • 1 teaspoon vanilla extract 

Toppings Optional

  • Fresh or dried berries
  • Crushed peanuts
  • Hemp or chia seeds
  • Mini chocolate chips

Instructions

  • Line a 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    In a mixing bowl, combine rolled oats, dried blueberries and chopped almonds.
    In a small saucepan, warm honey, almond butter and coconut oil over low heat, stirring until smooth. Remove from heat and stir in vanilla extract. 
    Pour the honey-almond-butter-coconut oil mixture into the dry ingredients and mix until well combined.
    Press around half the mixture into the bottom of the prepared pan using a spatula. 
    Spread Greek yogurt evenly over the top. Add the remaining oat mixture on top of the yogurt along with your choice of toppings.
    Freeze for 2-3 hours or until set. Remove from the pan and cut into 12-14 bars or more smaller squares. Keep refrigerated until ready to serve.
    Store in fridge for up to 1 week or freezer for up to 3 months. If frozen, let sit for 15 minutes for the bars to soften before eating.
