Blue Spirulina Swirl Fudge

Velvety, smooth, bright and vibrant healthy fudge tha tlooks a picture of yum!
Seriously...this recipe makes it easy to create homemade candy with swirls of the blue spirulina superfood with no candy thermometer needed!
The base of the fudge is made with homemade condensed milk which makes it the perfect treat if you love coconut like I do.  I’m obsessed with coconuts, they are my favorite ingredient in desserts and healthy snacks.
The world is going coconuts. Following the popularity of coconut water, a broad spectrum of foods derived from the humble coconut is available. It now comes in a variety of forms from water to milk, cream, butter, sugar, oil, flour, fine or coarse shredded allowing for a variety of creative ways to add coconut to a healthy diet.
Coconut contains a unique type of medium chain saturated fat called lauric acid that research shows raises HDL or "good" cholesterol levels, which lowers overall heart disease risk.
As a plant food, coconuts also contain disease-fighting phytochemicals or antioxidants. Research suggests that coconut products helps boost metabolism which is helpful if excess body fat needs to be lost.
Just one scoop of coconut oil delivers a wide-range of healing properties. Produced in its most natural state, coconut oil will benefit you, your children and your pets. I put some into my dogs dinner regularly.

The big secret here is that you will be using homemade condensed milk in this recipe, free of the LOADS of sugar in store bought stuff.
The facts are… manufacturers take out about 60% of the water from the milk to “condense” it down. After they “condense” the milk, they add about 40% sugar to fill the void from the water.
I’m sure you’re asking yourself why the manufacturers do this. Well, the added sugar means the shelf life is longer, plus transporting the milk is easier due to not having to store it in cooler temperatures.
Its always about the convenience to them, rather than people’s health.
But when you take the time and effort to make your own condensed milk, especially if its from coconut cream to make this delightful fudge candy, you get all the real, natural flavors - no artificial food flavorings here!  Each little cube is like a piece of heaven.
This blue spirulina fudge is super soft, yet holds its shape long enough for you to pop them in your mouth…  where they then melt in your mouth.
The recipe for the sugar free homemade condensed milk is below in notes. It really very easy to do and you can keep some in your fridge so its ready to add a dollop on EVERYTHING for a super healthy treat.
Now lets look more at the blue colour.
Blue Spirulina powder has been added to give a pretty vibrant blue effect.
Blue Spirulina, a well-known antioxidant superfood, is the magic ingredient that makes any food look Instagramable (#trendy). This intense deep blue pigment is known as phycocyanin and is extracted from spirulina (blue-green algae).
It is rich in protein, vitamins, minerals, iron, carotenoids and antioxidants and helps protect cells from damage. It is freeze dried to preserve its natural colour and nutrients.
You can get creative and add this beautiful nature product to literally anything for a heavenly nutritional boost and some epic blue instaworthy pictures!
You can add it to water, juices, smoothies, breakfast food, baked food, sweets, yoghurts, cereals or any other foods. For light blue shades, use just a pinch and for a more brilliant blue, use up to a full teaspoon or more.

Ingredients

Vanilla Layer

  • 1 cup white chocolate chips
  • 1/2 cup condensed milk,  store bought or for a healthy sugar free homemade recipe see below in notes
  • 1 tablespoon coconut oil
  • 1 teaspoon vanilla extract

Blue Spirulina Swirl Layer

  • 1 cup white chocolate chips
  • 1/2 cup condensed milk, store bought or for a healthy sugar free homemade recipe see below in notes
  • 1 tablespoon coconut oil
  • 1 teaspoon blue spirulina powder or a few drops of blue food colouring 

Instructions

  • If you are going to make your own condensed milk, make this first so its ready when you are going to make the fudge. Super easy recipe below in notes.

Vanilla Layer

  • Line an 8 x 8” baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the candy out easier for cutting. Or use a silicon candy mould or baking dish.
    Place the white chips, condensed milk and coconut oil to a microwave-safe bowl and microwave with 30 second bursts at 50% power stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips, condensed milk and coconut oil together.
    Stir in the vanilla extract.
    Pour into the prepared baking dish and smooth into an even layer.

Blue Spirulina Swirl Layer

  • Place the white chocolate chips, condensed milk, and coconut oil to a microwave-safe bowl and microwave with 30 second bursts at 50% power stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips, condensed milk and coconut oil together.
    Add the blue spirulina powder or a few drops of blue food colouring and mix until combined.
    Pour over the vanilla layer. Swirl with a knife mixing the two colours together in a haphazard manner.
    Cover with plastic wrap and place in the refrigerator to set for at least 2 hours.
    Lift the fudge from the baking dish by pulling up on the parchment paper. Cut into bite size squares.

Notes

There are some recipes that are just better with condensed milk (think fudge and ice cream!)
This is a super simple recipe that creates a delicious sugar free condensed milk, perfect for eating straight out the jar or in your favourite recipes!
