Blue Spirulina Energy Balls

They have a creamy filling made with 2 different types of coconut and don't contain any gluten, dairy, or refined sugars!
The most special part is they are made using blue spirulina powder to color them to a stunning blue hue. Perhaps you have seen photos of vibrant blue smoothie bowls in your Instagram feed and wondered,“What is it that gives them that hue?”
In this instance, the answer is blue spirulina- a fresh water blue-green algae that’s been harvested from lakes for thousands of years. About 60 percent protein by weight, blue spirulina is richer in beta-carotene than carrots and has an abundance of nutrients, including vitamin K and iron.
Research suggests that a daily dose of spirulina can help improve brain function and digestion, lower serum (total blood) cholesterol, reduce inflammation and neutralizes free radicals that cause premature signs of aging. and more.
Blue Spirulina, a well-known antioxidant superfood, is the magic ingredient that makes any food look Instagramable (#trendy). This intense deep blue pigment is known as phycocyanin and is extracted from spirulina (blue-green algae).

Ingredients

  • 1 cup coconut butter - store bought or recipe below in notes
  • 1/2 cup almond flour
  • 1/2 cup desiccated coconut
  • 2 tablespoons honey or maple syrup
  • 2 teaspoons blue spirulina powder
  • Pinch sea salt

Blue Coconut Coating

  • 1/2 cup desiccated coconut
  • Pinch blue spirulina powder

Instructions

  • Ensure the coconut butter is at a softened consistency by warming it at a gentle heat in a medium sized pot. Once melted, take off the heat and add almond flour, coconut, honey, blue spirulina powder and salt to the pot and stir until combined. Only one pot to clean so that’s a good thing!
    Take tablespoons of the mixture and roll into 12-14 balls then roll in the desiccated coconut Add a dash of blue spirulina powder to the coconut to get that special blue colour on the outside of the balls.
