Ingredients

  • 1 cup condensed milk – store bought or sugar-free recipe below in notes
  • 1 1/2 cups blackberries, fresh or frozen, unthawed
  • 1-2 tablespoons honey, or maple syrup
  • 1 teaspoon vanilla extract
  • 2 teaspoons lemon juice

Instructions

  • If you are making your own homemade sugar-free condensed coconut milk, make it first and let it cool before making the nice cream.
    Mash the berries, leaving a few larger chunks. Mix the berries with the coconut condensed milk, vanilla extract and lemon juice.
    Pour mixture into a glass dish, silicon or popsicle molds if you want to shape your frozen treat.
    Freeze: Place the container in the freezer and let the ice cream freeze until it reaches your desired consistency. It’s a good idea to give it a gentle stir after the first hour of freezing to ensure an even texture.
    Serving: When you are ready to serve the ice cream, simply remove it from the freezer and let it sit at room temperature for a few minutes to soften slightly. Then scoop and enjoy!
