Have you ever wished to eat birthday cake without all of the sugar that’s packed inside? Well, your dreams are officially coming true! With these birthday cake protein bars, you can finally satisfy your sweet tooth in a healthy, protein-packed way.

These soft and chewy bars are topped with rainbow sprinkles and are loaded with sweet cake batter flavor and festive colors, but none of the junk that you would typically find in a funfetti cake.

They are made with wholesome ingredients like oat and coconut flour, along with coconut butter to replace the white processed flour and butter. To replace refined cane sugar, we use real honey or maple syrup which are much healthier plant based alternatives with beneficial nutrients.

Also, making your own bars at home is more cost effective, and you have control over the quality of the protein powder you are using as well as the other ingredients. It doesn’t really get much easier, since its only a few ingredients to put these together, no baking is required and they taste amazing!

Birthday cake….and sprinkles. A marriage made in heaven and probably one of the most enjoyable treats that exist! So I figured it was about time to put it into a protein bar.

These birthday cake protein bars are a delicious grab-n-go breakfast or snack! Packed with fiber, healthy fats, wholefoods and filled with rainbow sprinkles for a little fun twist

Protein bars tend to hold me over between meals, and I have so many different variations to them. I love stocking my fridge and freezer with some form of protein bar. They are an easy snack to have on hand, so simple to make, and I love to get creative and switch things up from time to time.

Each protein bar is like your own personal birthday cake, but totally nutritious. The texture of these bars is amazing. Soft, and easy to eat. You will want to keep them in the fridge as they will get quite soft at room temperature.

Its so easy, you just melt the coconut butter and honey, then mix everything else in. Then you chill and cut the bars. That’s it!  You could enjoy right away or store in your freezer or refrigerator.

They are perfect to enjoy on your special day or whenever you need a little pick-me-up snack.  Or, you can surprise a friend, co-worker or family member with these on their birthday. They make a fun food gift for sure.  I know I would appreciate it if someone made these for my b-day.  Hint, hint! 😉

Which is why I knew I needed to find a way to enjoy birthday cake every single day. These bars are the perfect balanced snack. They are packed with protein, healthy fat, naturally sweetened and taste just like the classic ‘confetti cake mix’ we all grew up eating on our birthday.

These are great for kids because they are not only loaded with nutrients, but also look tasty, and appetizing with colourful sprinkles!

Birthday Cake Protein Bars

 
These birthday cake protein bars boast 15 grams of protein and taste like cake batter! A perfect snack, pre or post-workout, or dessert. No-bake, gluten-free, and so easy to make!

Ingredients

  • 1 cup oat flour (rolled oats blended to a fine flour)
  • 1/2 cup coconut flour
  • 1/2 cup coconut butter–store bought or homemade sugar free recipe below in notes
  • 1 cup whey protein isolate – plain or vanilla
  • 1/4 cup honey or maple syrup
  • 1 tablespoon milk - any will do, plus more as needed
  • 2 tablespoons sprinkles - plus more for topping
  • 1 teaspoon vanilla extract

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    Place the coconut butter and honey in a medium sauce pan and gently warm up until melted.
    Add oat, coconut flour, protein powder and vanilla and mix until a dough is formed. Add milk a tablespoon at a time to help it come together.  
    You can add all the ingredients into the saucepan using it as a mixing bowl to save more washing up (always a good thing!)  😊
    Mix in the sprinkles with a wooden spoon or clean hands.
    Press dough into the lined pan and smooth it out evenly with a spatula or back of a spoon. Place in fridge for 30 minutes to firm up.. Cut into 8-10 bars.
    Keep stored in the fridge for up to 1 week or freezer for up to 3 months.
