Birthday Cake Protein Bars

 
These birthday cake protein bars boast 15 grams of protein and taste like cake batter! A perfect snack, pre or post-workout, or dessert. No-bake, gluten-free, and so easy to make!

Ingredients

  • 1 cup oat flour (rolled oats blended to a fine flour)
  • 1/2 cup coconut flour
  • 1/2 cup coconut butter–store bought or homemade sugar free recipe below in notes
  • 1 cup whey protein isolate – plain or vanilla
  • 1/4 cup honey or maple syrup
  • 1 tablespoon milk - any will do, plus more as needed
  • 2 tablespoons sprinkles - plus more for topping
  • 1 teaspoon vanilla extract

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    Place the coconut butter and honey in a medium sauce pan and gently warm up until melted.
    Add oat, coconut flour, protein powder and vanilla and mix until a dough is formed. Add milk a tablespoon at a time to help it come together.  
    You can add all the ingredients into the saucepan using it as a mixing bowl to save more washing up (always a good thing!)  😊
    Mix in the sprinkles with a wooden spoon or clean hands.
    Press dough into the lined pan and smooth it out evenly with a spatula or back of a spoon. Place in fridge for 30 minutes to firm up.. Cut into 8-10 bars.
    Keep stored in the fridge for up to 1 week or freezer for up to 3 months.
