Beet Nut Butter Cups

Beet nut butter cups! These gorgeous treats are easy to make and so vibrant. The colour comes from mixing beetroot into the homemade nut butter. It's then slathered in dark chocolate. Bliss!
Beet nut butter. I'll admit that this recipe came about because I wanted to write nut butter. We're breaking new ground here, people: Beet. Nut. Butter. Yeaaaah.
You can't taste the beet, but woah - the colour! All you need to do is mix beetroot into your homemade nut butter for that amazing colour. The beetroot leaves the nut butter a stunning purple colour.
But we all know the decadent amazingness of peanut butter and chocolate, right? And beetroot and chocolate is pretty great. So how but bright purple beet nut butter cups? Waaaay better. Because it's purple. And it has veg. Fist pump.
I made my beet nut butter with cashews, but use any nuts you have. It would be great with almonds or hazelnuts as well. They taste like legit rich, soft cantered traditional chocolates but are still sweet, even addictive and they come in an adorable little package.

Can chocolate really be good for you?
It’s a great question and I’d like to just say yes, but of course, it’s not quite that simple! Based on everything I’ve learned, I believe that dark chocolate can be good for you, in small amounts.
Enjoying chocolate doesn't have to be a guilt-ridden affair. With some knowledge and mindfulness, you can savor your favorite treats while maintaining your health goals.
Chocolate isn’t just a sweet treat; it symbolizes joy, celebration, and nostalgia. Whether it's the colorful array of candies that brighten up Easter baskets, Halloween candy, or the festive candy canes adorning our Christmas trees, candy plays an integral role in our lives year-round.
I want to introduce an important principle: balance and moderation. While indulging without restraint is tempting, enjoying candy in moderation as part of a balanced diet is the best way to support your health and well-being.
So I believe candy can be part of a balanced diet and a little bit of good quality dark chocolate on a regular basis is good for you. Even milk chocolate can be saved for an every now and then treat.
Chocolate and nut butter is a match made in heaven. Seriously though these beet nut butter chocolate cups are SO good! They taste better than store bought chocolates in my opinion. You can’t go wrong with these cute little treats.
You can also try making these into mini form! They are super adorable, easier to eat, and make double the amount of cups. Perfect to take to a pot luck or family gathering. They will be gone in a heartbeat!

Ingredients

  • 1 cup unsalted nuts (try cashew, hazelnut, almond, walnuts etc…)
  • 1 13.5 oz can coconut cream, full fat (solid part only) *see note below
  • 1 medium cooked beet
  • 1 1/4 cups chocolate (dark,  semi-sweet, milk, whatever you prefer)
  • 1 tablespoon coconut oil

Instructions

Beet Nut Butter

  • Note: Place the can of coconut cream or milk in the fridge or freezer for at least 1-2 hours before making these treats to allow coconut cream to separate.
    Line a muffin tin with 12 paper liners. Or use a silicon muffin pan or individual silicon muffin cups.
    Place the nuts in a food processor and process until broken down and crumbly.
    Open chilled can and scoop out the cream that has separated and set hard on the top. Save the remaining coconut water to use in a smoothie, drink, or discard.
    Add the coconut cream and cooked beet to the food processor and process again until the mixture is thick and creamy.
    You may need to stop and scrape down the sides of the food processor halfway through.
    Place the beet nut mixture in a small bowl or jar and place in the fridge while you melt the chocolate and make the chocolate cups.

Chocolate Cups

  • Place chocolate chips and coconut oil in small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth. It should be melted after around 1 minute and 30 seconds, but it can vary with each microwave.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Pour a teaspoon (or more) of the melted chocolate evenly at the bottom of each cup. Using a spoon, push some of the melted chocolate up the sides of the paper liners, about halfway to the top of each cup. This will make the sides of the cups and will ensure that the soft nut butter doesn't pour to the sides.
    Place in the fridge on a flat surface and let chill for 5minutes or until the chocolate firms up.
    Once the chocolate is set, place teaspoons of the beet nut butter onto the centre of the hardened chocolate and gently press down slightly with a damp spoon. Don't overfill them. It should just reach the top of the chocolate on the sides of the cup.
     If your chocolate has hardened you may need to gently warm it up again in the microwave. Spoon the left over melted chocolate over the filling to cover in each cup. Refrigerate until hardened. Store in the fridge until ready to eat.
    Place in the fridge and let chill for 10 minutes or until firm.
    Store the cups in an airtight container in the fridge for up to 1 week.
