These no bake energy bars are super simple to make and super sweet, but are made with nutritious CLEAN FOOD ingredients, like banana, dates, cashews, and coconut.

And the best part is, that’s all that’s in there! Well, I did toss in a few white chocolate chips, just for fun, but you can skip those if you want to.

So where’s the caramel? Well, have you eaten dates, especially when they are pureed? They totally taste like caramel, especially with the creamy, buttery flavor of cashews and the sweetness of the ripe banana.

These delicious bars come together quickly and make the perfect snack. You only need a handful of ingredients and they take around five minutes to construct making them a really simple recipe to store in the freezer for a quick burst of energy.

This recipe is a ‘healthified’ take on traditional sugar-loaded candy bars but made with wholesome ingredients.  As well as being a much healthier version its also much easier to make!

These bars are crunchy, chewy, sweet, and salty all at once, and taste just like a candy bar. So easy to throw together. Simply blend some banana, with some cashews and dates, coconut and chocolate chunks, chill then enjoy! You can also roll the dough into balls if you don’t wish to make them into bar form.

Make these energy bars even healthier by adding a handful of nuts or old-fashioned oats to add texture and nutrition. Even better, add a tablespoon of hemp or chia seeds or ground flaxseed.

Every time I make this recipe, it doesn’t last in my house for more than two days. My family just can’t get enough of it!

Banana Caramel Cashew Energy Bars

There's only six ingredients in these chewy homemade energy bars! They are no bake so are a lot faster to make and less fuss. Did I mention they taste freaking amazing?
As well as being really easy to make, these bars are healthier than your average treat as they are made with wholesome REAL food ingredients.

Ingredients

  • 1 cup cashews, soaked 3+hours and drained
  • 1 cup dates, soaked 30 minutes and drained
  • 1 medium ripe banana
  • 1/2 cup desiccated coconut
  • 1/4 cup white chocolate chips
  • 1 teaspoon vanilla extract

Instructions

  • Line a 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    Place cashews and dates into a food processer and process until broken down and crumbly. Add coconut, banana and vanilla and continue to process until mixture is sticky and well combined.
    Be careful not to over process as its nice to have texture variance and different sized “bits” in your energy bars.
    Lastly add chocolate chips and pulse a couple of times to incorporate.
    Press the base mixture into the bottom of your pan or dish evenly.
    Place in refrigerator for a few hours or overnight, until firm (the longer your store them, the more they firm up).
    Cut into 16 bars or more smaller squares and store in an airtight container in the refrigerator for up to 1 week or freezer for up to3 months.
