Banana Caramel Cashew Energy Bars

There's only six ingredients in these chewy homemade energy bars! They are no bake so are a lot faster to make and less fuss. Did I mention they taste freaking amazing?
As well as being really easy to make, these bars are healthier than your average treat as they are made with wholesome REAL food ingredients.

Ingredients

  • 1 cup cashews, soaked 3+hours and drained
  • 1 cup dates, soaked 30 minutes and drained
  • 1 medium ripe banana
  • 1/2 cup desiccated coconut
  • 1/4 cup white chocolate chips
  • 1 teaspoon vanilla extract

Instructions

  • Line a 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    Place cashews and dates into a food processer and process until broken down and crumbly. Add coconut, banana and vanilla and continue to process until mixture is sticky and well combined.
    Be careful not to over process as its nice to have texture variance and different sized “bits” in your energy bars.
    Lastly add chocolate chips and pulse a couple of times to incorporate.
    Press the base mixture into the bottom of your pan or dish evenly.
    Place in refrigerator for a few hours or overnight, until firm (the longer your store them, the more they firm up).
    Cut into 16 bars or more smaller squares and store in an airtight container in the refrigerator for up to 1 week or freezer for up to3 months.
