Avocado Coconut Nice Cream

Fruit-based ice cream may be the original ice cream, but the term has come to represent any fruit-based treat free from loads of sugar and artificial flavors.
Its a yummy ice cream made with frozen fruit (usually bananas) base and other add-ins!  You simply blitz pieces of frozen fruit in a food processor and the end result is a whole-food ice cream that is rich, creamy, and luscious enough for a special occasion yet light and easy enough for an any time indulgence.
It’s called ‘nice cream’ rather than ice cream, just to differentiate the two. Nice cream is a super easy, take on traditional ice cream, yet made very differently.
It sounds too good to be true doesn’t it? Ice-cream just out of bananas – yeah right! About this little concoction, I cannot hold back. It IS amazing. You will need to keep going back and trying it and saying – that can’t be right.
It tastes like ice-cream and it is so damn good! This is definitely one for the recipe bible. You will be in awe of the creamy, fruitful deliciousness before your spoon even begins to melt into the bowl.
You can satisfy an ice cream craving guilt-free with this “nice cream“! Seems so simple, that it feels like you are cheating a bit…but to be honest – it’s delectable stuff. And let’s face it, why make it complicated when something this simple can taste insanely delightful!
Once you start making nice creams, you will stop buying store bought ice creams, the creaminess it has is nothing less than any ice cream and the plus point is, it is absolutely healthy!

It’s healthy ice cream! There’s no chemicals, additives or refined sugar added, with plenty of healthy fats to help keep you feeling satisfied.
No ice cream maker required. I’ve tested this recipe both ways, and you can definitely make it without the ice cream maker if you don’t have one. It’s ready to eat in less than 30 minutes if you do have one, though!
It’s naturally green. The avocado adds a beautiful green color, with no artificial food dyes.
Simple ingredients. All you need is 4-5 simple ingredients, which you may already have on hand in your pantry.
It’s delicious! Once you taste it, you won’t believe that this ice cream is made with avocado.
Pro Tip: Be sure to taste the avocado before you use it in this ice cream recipe. Bruised or over-ripe avocados can sometimes be too strong in flavor, so you want to make sure you pick a more mild one to use in this recipe.

Ingredients

  • 2 ripe avocados
  • 1 banana, sliced, frozen
  • 2 tablespoons honey or maple syrup
  • 1/2 cup coconut milk or cream, full fat
  • 1/4 cup chocolate chips or cacao nibs (optional)

Optional Toppings

  • Dollop of whipped coconut cream – recipe below in notes
  • Chopped nuts
  • Fresh or dried fruit
  • Hemp or chia seeds
  • Shredded coconut
  • Nut butter drizzle

Instructions

  • Cut open avocados and remove the pit and the avocado flesh from the shell.
    In a food processor, add in avocado, banana, honey, and coconut milk and blend until smooth and creamy.
    Add in chocolate chips and mix with a spatula.
    Transfer ice cream to a parchment lined pan (a bread pan is ideal), cover with plastic wrap, and place in the freezer for 1-2 hours then enjoy!
