Apricot Oat Energy Bars

Say goodbye to empty calorie store-bought bars! These energy bars are loaded with nutrients and seriously yummy. Perfect for a snack, post work out or hike energy boost or healthy dessert, also fabulous to pop into your kids lunchbox and also great to take to work!
These Apricot Oat Energy Bars are a staple recipe to have on hand when you need a quick healthy snack with just the right amount of sweetness from dried fruit.
These bars are quick and easy to make. Best of all you get to say what goes in them. The recipe is completely customisable. Use whichever nuts and seeds and fruits you love best. Then switch up and reinvent the bars with new ingredients every time you make them.
I love this recipe as it just uses one pot to mix everything, no blender or extra bowls. You can add chopped nuts, seeds, coconut or even peanut butter in these wholesome, easy to make chewy energy bars. What’s not to love about these? They take under 10 minutes to prepare and are packed with healthy ingredients.

I stash these in the freezer and remove them about 5 minutes before eating. Then I always have a pick me up ready on hand.

Ingredients

  • 1 1/2 cups old-fashioned rolled oats
  • 1 cup dried apricots,finely chopped
  • 3/4 cup tahini (sesame seed butter)
  • 1/4 cup hemp seeds
  • 2 tablespoons honey or maple syrup
  • 4 tablespoons coconut oil
  • 1 teaspoon vanilla extract

Instructions

  • Line an 8 x 8” baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    In a saucepan, gently melt tahini, honey and coconut oil over low-medium heat and stir until well combined.
    Add all other ingredients – oats, apricots, hemp seeds and vanilla extract and mix well.
    Firmly press the mixture into the lined tin using a flat object or your hands to spread it out evenly,
    Refrigerate for 2 hours or preferably overnight until set.
    Cut into 12 bars (or more squares if preferred).
    Store in fridge for up to 2 weeks or in freezer for 6 months.
