Apple Mint Coconut Bars


Yep, I’ve reinvented these favourite indulgent treats without all the refined sugar and excessive carbs… Meet the morish Apple and Mint Bar – perfect for a convenience snack or post workout treat.


1 cup coconut butter

2 tablespoons coconut oil, melted

1-2 tablespoons honey or maple syrup

5-10 drops peppermint extract

5-10 drops almond extract

1 medium green apple grated


Mix coconut butter, coconut oil, honey, peppermint and almond extracts together well. Grate apple and mix in well.

Spread in a square baking dish or pie dish evenly and refrigerate for an hour or so. Cut into bars and enjoy!
