Almond Butter Smoothie Bowl With Hidden Veges
It tastes like dessert, a sweet treat, if you will. And it contains vegetables! What? Yes, it’s true. It’s also super delicious! So run, don’t walk, to your nearest blender and get going as this incredible smoothie bowl is just waiting to be enjoyed! Wait, what? We’re putting cauliflower in a smoothie? You bet your smoothie bowls we are! Way back in the day, I saw recipes for smoothies containing cauliflower, and I could not handle it. That can’t be, I thought.“You can’t even taste the cauliflower,” they said. I wasn’t even sipping a smoothie at that moment, but already I could taste the cauliflower. “It’s so rich and creamy,” they said. Yeah, in a fibrous, vegetable-y kind of way, I’m sure. Then I finally bit the bullet, threw some steamed-then-chilled cauliflower in a smoothie, and lo and behold, it was AMAZING! Hence, this Smoothie Bowl recipe. It tastes just like ice cream but it’s simple and healthy enough for breakfast, loaded with nutrients thanks to that secret veggie: cauliflower! This quick and easy smoothie does not taste like it’s packing veggies – I promise!
Ingredients
- 1/2 cup almonds or walnuts
- 1 cup milk of choice
- 1 cup cauliflower florets, (or rice) steamed and chilled
- 2 tablespoons almond (or any other nut or seed) butter
- 1 tablespoon honey or maple syrup
- 1 teaspoon cocoa or cacao powder
- 1/2 teaspoon vanilla extract
Optional Toppings
- Sliced bananas Chia, hemp, and/or flax seeds Granola Chopped toasted nuts Shredded coconut Berries or any other fruit Shaved dark chocolate Creamy nut butter drizzle
Instructions
- Place almonds into a food processor blender and process until broken down and crumbly. Add all other ingredients and continue to process until smooth and creamy.Serve immediately and top with your favorite toppings.Refrigerate any leftovers and consume within about 2-3 days.
