No oven, no complicated steps, and no need to give up dessert!
Why You Will Love These Protein Bites
There is something special about the combination of nut butter, caramel, and chocolate. The salty nuttiness balances the sweetness, while the contrasting textures make every bite interesting.
In this recipe, soft dates create a naturally sweet, caramel-like base, nut butter brings creaminess, and chopped peanuts provide that unmistakable Snickers crunch. Protein powder adds a satisfying boost, while the white chocolate coating brings everything together in a sweet, creamy shell.
They are perfect for an afternoon pick-me-up, a little after-dinner dessert, or a homemade snack to keep in the fridge for when chocolate cravings strike.
A Sweet Treat With A Protein Boost
Protein is an essential nutrient that supports muscle maintenance and repair. It also contributes to feelings of fullness, helping make snacks more satisfying.
That is why we love incorporating protein powder into homemade treats. Rather than simply adding more sweetness, we are including an ingredient that helps make these bites more substantial.
Combined with peanut butter and peanuts, the protein powder creates a delicious filling with a soft, almost nougat-like texture.
Choose vanilla protein powder for a classic sweet filling or try peanut butter-flavoured protein powder for an extra nutty taste. You can also use an unflavoured variety and adjust the sweetness to your liking. Remember that the protein content will vary depending on the brand of protein powder you use and the size of your bites.
The Secret Is The Caramel Centre
You do not need to make traditional caramel with refined sugar to create that rich, sticky texture we associate with a Snickers bar.
Soft Medjool dates are naturally sweet and blend into a thick, caramel-like paste. Combined with nut butter and vanilla, they make a delicious base layer that complements the crunchy peanuts perfectly. If your dates are a little firm, soak them in warm water for 10 minutes, then drain them well before blending. This helps create a smooth, easy-to-work-with mixture.
A pinch of sea salt is another little trick that brings out the peanut flavour and balances the sweetness.
White Chocolate Makes Them Extra Special
Dark chocolate is the traditional Snickers coating, but white chocolate gives these bites a completely different personality. Its creamy sweetness pairs beautifully with nut butter and caramel, creating a flavour reminiscent of a white chocolate peanut butter truffle.
For the smoothest coating, melt the white chocolate gently and stir in a little coconut oil. This helps it become easier to dip and creates a lovely finish once chilled. You can even sprinkle a few crushed peanuts over the coating before it sets for an attractive, crunchy finish.
Perfect For Your Freezer Stash
These bites are ideal for making ahead. Prepare a batch, let the chocolate set, and store them in an airtight container in the fridge or freezer.
They are delicious straight from the refrigerator, or you can let frozen bites soften for a few minutes before enjoying them.
They are also easy to customise. Add extra chopped peanuts for crunch, a tiny pinch of flaky salt for a sweet-and-salty finish, or a little melted dark chocolate drizzled over the white chocolate coating for a two-tone effect.
Simple ingredients, delicious flavour, and a little protein boost – that’s Blended Bites style! 🤍
