Ingredients
- 1 cup natural cashew butter (or almond butter for a slightly nuttier flavour)
- 3/4 cup desiccated coconut
- 3/4 cup white chocolate chips, melted
- 1/2 cup vanilla or unflavoured protein powder
- 1/3 cup maple syrup or honey
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- Pinch of sea salt
Toppings Optional
- Extra melted white chocolate drizzle
- Crushed macadamias
- Toasted coconut flakes
Instructions
- Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.In a mixing bowl, combine nut butter, maple syrup, melted coconut oil, and vanilla extract. Stir until smooth.Add protein powder and sea salt. Mix until thick and creamy.Fold in shredded coconut.Stir in the melted white chocolate until fully combined.Press mixture into the prepared tin and smooth the top.Add any optional toppings.Chill in the fridge for 1–2 hours or freeze for 45–60 minutes until set.Slice into 12-16 squares and store in an airtight container in the fridge up to 1 week or freezer up to 3 months.
