1cupnatural cashew butter (or almond butter for a slightly nuttier flavour)
3/4cupdesiccated coconut
3/4cupwhite chocolate chips, melted
1/2cupvanilla or unflavoured protein powder
1/3cupmaple syrup or honey
1/4cupcoconut oil, melted
1teaspoonvanilla extract
Pinch of sea salt

Instructions
Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.In a mixing bowl, combine nut butter, maple syrup, melted coconut oil, and vanilla extract. Stir until smooth.Add protein powder and sea salt. Mix until thick and creamy.Fold in shredded coconut.Stir in the melted white chocolate until fully combined.Press mixture into the prepared tin and smooth the top.Add any optional toppings.Chill in the fridge for 1–2 hours or freeze for 45–60 minutes until set.Slice into 12-16 squares and store in an airtight container in the fridge up to 1 week or freezer up to 3 months.
