Ingredients

Option 1 (Dairy)

  • 1 1/2 cups heavy whipping cream

Option 2 (Dairy-Free)

  • 1 1/2 cups chilled full-fat coconut cream (homemade whipped coconut cream recipe also below in notes) 

Plus:

  • 1 scoop protein powder (see flavour ideas below)
  • 2 tablespoons maple syrup or powdered monk fruit sweetener (optional)
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Flavour Options

Vanilla

  • Vanilla protein powder

Chocolate

  • Chocolate protein powder + 1 tbsp cacao or cocoa powder

Strawberry

  • Vanilla protein powder + ¼ cup freeze-dried strawberry powder

Coffee

  • Vanilla protein powder + 1 tsp instant espresso powder

Optional Toppings

  • Melted dark or white chocolate drizzle
  • Chopped nuts

Instructions

  • Chill a mixing bowl for 10 minutes.
    Add the heavy cream (or coconut cream) to the bowl.
    Beat until soft peaks form.
    Add the protein powder, vanilla, sweetener, salt and any flavour additions.
    Continue beating until stiff peaks form.
    Transfer the mixture to a piping bag fitted with a star nozzle.
    Pipe swirls onto a baking paper-lined tray or into silicone moulds (or simply spoon dollops onto the tray).
    Add your favourite toppings.
    Freeze for 2–3 hours until firm.
    Enjoy straight from the freezer.
    Store in an airtight container in the freezer for up to 1 month.
