Chocolate Chip Protein Bark
Ingredients
- 2 cups thick Greek yogurt (or dairy-free Greek-style yogurt)
- 1/2 cup almond flour
- 2 tablespoons coconut flour
- 1 scoop vanilla protein powder
- 2 tablespoons maple syrup or honey (optional)
- 1/3 cup mini dark chocolate chips
- 1 teaspoon vanilla extract
- Pinch of sea salt
Chocolate Topping
- 1 cup dark chocolate chips
- 1 tablespoon coconut oil
Optional Toppings
- Extra mini chocolate chips
- Chopped almonds
- Toasted coconut
- Cacao nibs
- Flaky sea salt
- Crushed freeze-dried strawberries
Instructions
- Line a small tray or loaf pan with baking paper.In a large bowl, stir together the Greek yogurt, protein powder, almond flour, coconut flour, vanilla extract, maple syrup (if using), and sea salt until smooth and thick.Fold in the mini chocolate chips.Spread the mixture evenly into the prepared tray, about ½ inch thick.Freeze for 1–2 hours until firm.
Chocolate Topping
- Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Pour the melted chocolate over the frozen protein layer and spread evenly.Sprinkle with your favourite toppings while the chocolate is still soft.Return to the freezer for another 20–30 minutes until the chocolate is fully set.Slice or break into bark pieces and enjoy.Store in an airtight container in the freezer for up to 2 months. Let the bark sit at room temperature for 2–3 minutes before serving for the creamiest texture.
