I LOVE making birthday cake inspired snacks and treats and these are fun to make and fun to eat. SO yummy! And…it doesn’t have to be your birthday to them! I had some sprinkles on hand and hence these protein balls were born! They are quick to whip up, taste like an indulgent treat, are nutritious, and are perfect for an easy, healthy snack. Make a big batch of these balls and keep them on hand in the fridge of freezer for easy, grab-and-go protein snacks!
They are made with the realest and simplest ingredients. In fact there are 3 different types of coconut products in these bites – coconut flour, desiccated coconut and coconut oil. To hold everything together is a hit of protein powder (this acts as a “flour” to the balls and helps the ingredients stick together), cashew butter and are sweetened with a touch of honey.
Personally, my favorite part aside from the taste is the texture, it’s really incredible. It’s cake-like in a no bake kind of way- so chewy and soft! If you wanted to make these a different flavor, you totally could. For example, lime bites would be SO YUMMY or orange. I would start with adding some fresh lime or orange juice and zest to the batter and a little bit extra oat flour. you can do a taste test and adjust from there. Also, a spoonful or cocoa for a chocolate version would be so yummy. Want to make them super fancy? Add some mini marshmallows AND chocolate chips. Honestly, so many combinations would work, it’s just such an easy and delicious base and a place to start from.

Birthday Cake Coconut Protein Balls
Ingredients
- 1 cup coconut flour
- 1/2 cup desiccated coconut
- 1/2 cup vanilla or unflavoured protein powder
- 1/3 cup cashew butter
- 1/4 cup coconut oil, melted
- 2 tablespoons honey or maple syrup
- 2-3 tablespoons milk of choice if needed
- 1 teaspoon vanilla extract
Chocolate Drizzle
- 1/2 cup white chocolate chips
- 1 teaspoon coconut oil
- 1-2 tablespoons rainbow sprinkles
Instructions
- Mix the coconut flour, coconut, protein powder, cashew butter, coconut oil, honey, and vanilla extract together in a bowl. If the dough seems a little dry add milk, a tablespoon at a time until it comes together (different protein powders absorb moisture differently).Roll into 10-12 balls (about 1-1½ inches in size) and place them on a small baking sheet (or plate) lined with parchment paper.
Chocolate Drizzle
- Place chocolate chips and coconut oil in small dish and microwave with 15 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once melted, drizzle the white chocolate over each protein bite using a spoon or a small Ziplock bag with the corner snipped off.Immediately add sprinkles to each one and place in the refrigerator for about 5-10 minutes for chocolate to set.Store in the fridge for up to 1 week or freezer for up to 3 months.
