Birthday Cake Coconut Protein Balls

Ingredients

  • 1 cup coconut flour
  • 1/2 cup desiccated coconut
  • 1/2 cup vanilla or unflavoured protein powder
  • 1/3 cup cashew butter
  • 1/4 cup coconut oil, melted
  • 2 tablespoons honey or maple syrup
  • 2-3 tablespoons milk of choice if needed
  • 1 teaspoon vanilla extract

Chocolate Drizzle

  • 1/2 cup white chocolate chips
  • 1 teaspoon coconut oil
  • 1-2 tablespoons rainbow sprinkles

Instructions

  • Mix the coconut flour, coconut, protein powder, cashew butter, coconut oil, honey, and vanilla extract together in a bowl. If the dough seems a little dry add milk, a tablespoon at a time until it comes together (different protein powders absorb moisture differently).
    Roll into 10-12 balls (about 1-1½ inches in size) and place them on a small baking sheet (or plate) lined with parchment paper.

Chocolate Drizzle

  • Place chocolate chips and coconut oil in small dish and microwave with 15 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted, drizzle the white chocolate over each protein bite using a spoon or a small Ziplock bag with the corner snipped off.
    Immediately add sprinkles to each one and place in the refrigerator for about 5-10 minutes for chocolate to set.
    Store in the fridge for up to 1 week or freezer for up to 3 months.
